  • Marzipan!

    I love it. I want to make it carb friendly. Any suggestions? I would think besides the honey it would be pretty simple. Oh and this is so calorie dense i'm sure I couldn't have more than a pinch.

    Marzipan is a confectionery consisting primarily of ground almonds and sugar that derives its characteristic flavor from bitter almonds, which constitute 4% to 6% of total almond content by weight. Most marzipan is also flavored with rosewater.
    Although it is believed to have originated in Persia (present-day Iran) and to have been introduced to Europe through the Turks, there is some dispute between Hungary and Italy over its originator. Marzipan became a specialty of the Baltic Sea region of Germany. In particular, the city of Lübeck has a proud tradition of marzipan manufacture. The city's manufacturers like Niederegger still guarantee their Marzipan to contain two thirds almonds by weight, which results in a juicy, bright yellow product.

    Under EU law, marzipan must have a minimum almond oil content of 14% and a maximum moisture content of 8.5%. Optional additional ingredients are rosewater, honey, pistachios and preservatives. In the U.S., marzipan must include at least a quarter almonds by weight, otherwise it is considered to be almond paste. However, in Sweden and Finland "almond paste" refers to a marzipan that contains 50% ground almonds, i.e. a much higher quality than regular marzipan.

    It is often made into sweets: two common uses are marzipan-filled chocolate and small marzipan imitations of fruits and vegetables. It is also rolled into thin sheets and glazed for icing cakes and is traditionally used in wedding cakes, Christmas cakes, and stollen. In some countries marzipan is shaped into small figures of animals, such as pigs, as a traditional treat for New Year's Day.

    Marzipan is also used in Tortell, and in some versions of king cake eaten during the Carnival season.

    In Italy, particularly in Palermo, marzipan is often shaped and painted with food colorings to resemble fruit - Frutta martorana - especially during the Christmas season.

    In Portugal traditional marzipan (maçapão) fruit shaped sweets made in the Algarve region are called morgadinhos.

    You'd have to grind the almonds very fine. Almost to the point where it's just about to turn to almond butter. For the bitter almond flavor, you might have to see if they sell bitter almond extract. Rose water I've seen in Middle Eastern/Turkish stores and occasionally in the international section of some supermarkets.

    Sweetener of your choice. I would stay away from very dilute liquid sweeteners like Davinci syrups and go for the concentrated liquid drops or the powdered stuff.

      Omg, I'm sorry, I have no idea how to adapt this to a low-carb recipe, but I'm with you on this! I loved marzipan as a kid, love almonds right now, and would die to be able to make some guilt-free mazipan cookies.

      Maybe Heidi can weigh in on this?

      I'm not sure how to replace the confectioner's sugar in it, like exactly what sweetener, how much, etc....

        I've made it regular before, I was wondering how the flavor would be affected. i think I'd use stevia (powder).

          Here is a low carb recipe for marzipan

          Marzipan

          Ingredients:
          • 1 7-oz. pkg. of unsweetened grated coconut
          • 1 pkg sugar-free gelatin mix (small box - your flavor choice)
          • 1 cup almond flour/ground almonds
          • 1/2 cup heavy cream
          • 2/3 cup Splenda
          • 1/2 teaspoon vanilla extract
          • 1/2 teaspoon almond extract
          Combine all ingredients. Shape into designs with candy molds (like fruits or veggies etc. - you may add food coloring for truer details if gelatin does not color to preference,) or form into simple circles. Chill until forms hold their shape.

          Makes 24 1-inch forms — 5 carbs per piece.

            That one sounds interesting. I'd leave the coconut out (I like it, but not in this).

              It calls for 7 ounces of coconut. You may need to replace it with something instead of just leaving it out--that's quite a lot of volume to just leave out, I'm sure that would mess with the consistency.

                I would grate it pretty fine. I never had marzipan with coconut in it, so I wonder how it would taste.

                  Well, you're one step ahead of me, I've never even had marzipan! LOL Let us know if you figure out a good recipe. That was the only one I could find under a search for low carb marzipan!

                      A mexican company is making a low carb mazapan with maltitol and splenda, I tried and it is really good.

                        Wow, thanks MoG... I'm going to head out to the health food store for some unsweetened coconut (central Maine grocery stores have nothing like it; we live in the Dark Ages!) and make a batch for DH and me. Yummy!

                            Yup, decorations, little fruit looking things, a lot around Christmas. I don't find it too sweet, i'm not a big sugar person.

                              Ok I made that recipe last night and I have to be honest ...it did not come out very well at all ..texture or taste wise....I am sorry to report that ..maybe it was me it was more like halva then marzipan and it kind of tasted strange ....anyway ...you guys try it because it probably was me ..it sounded like it would be good but ...not...
