Okay, I love venison. I still make ground venison on this WOL, as the flavor is still great and unlike beef, there is never any fat to drain out! But when I make a roast or steak I have a problem. Venison has a "gamey" flavor, and the only way I know how to counter-act it is 1. Cook with wine or 2. Soak the meat in milk before cooking. As you can tell, on extended induction these are no-nos. Does anyone know an induction friendly method for getting rid of the gamey flavor? If not, how bad is it to use wine (minimal) when cooking the meat, before reaching the proper rung?

If you soak it in milk overnight the gamey flavor pretty much goes away. Just can't use it in this WOL!

I never had "gamey" venison I would not eat it if it was gamey.... my husband said that flavor comes from "hanging" the animal to age it ..most people I know just butcher it and put it in the freezer ...so the meat never tastes wierd or off ...
I don't know I have heard people say "gamey" but that would just not appeal to me..but I do love venison and eat it rare and never ever soak it in milk..
you really can just marinate it and cook it IMHO ....I think like lamb some meats are stronger if you over cook them and maybe that is the issue it is over cooked perhaps if you undercook it you won't need to soak it?

As a lifelong hunter, I agree with this. The so called "gaminess" comes from either improper handling of the game gutting/cleaning or spoilage caused by being hung at incorrect temperatures. Hanging game should only be done in a controlled temperature environment, and the tree out back isn't it !!! Fluctuations from day to night temperatures, sun, insects, all contribute to spoil the meat. My game is processed and frozen as soon as possible. Another thing that ruins venison of any sort is overcooking, unless you're stewing the meat. I never roast venison, it's just too dry. I will pot roast or pressure cook a venison roast, the rest becomes steaks, which are only cooked to medium/medium rare. Just as a guide, remember that you can do almost anything to venison that you can do with beef or lamb, or any red meat (except roast). Roasting can be done if you lard the roast with either bacon, salt pork, or beef sirloin fat.

My soon to be ex husband has made jerky from it, AND has wrapped it in bacon with onions and put it on the bbq grill, and it was delicious!

I agree with the gamey stuff. My dh is an avid deer hunter, and I can't tell you how much venison steak, roast, jerky, sausage, oh and bambi burgers I have had in the past several years! I just prepare as normal, and things turn out great. We do shell out the extra expense to take it to the meat locker and have it prepared, so that must be why! I actually use venison ground as a staple and rarely have burgers that aren't at least 1/2 deer. Noone has ever guessed either! (guests that is)
