Taco Pie
Ingredients
2 pounds ground beef
red pepper and garlic powder, to taste
1-2 jalapeno peppers, seeded and finely diced
2 medium tomatoes, diced
one 8-oz bag of any shredded mexican cheese (I used a grocery store blend)
1 whole wheat low-carb tortilla, torn in small strips
sour cream
Directions:
1. Cook ground beef in a skillet until nearly browned.
2. Add red pepper and garlic powder to season the meat until the meat is coated and seasoned to your liking. Allow spices to cook into ground beef until fully browned in its own fat or add 1/4-1/2 cup water and cook spices into meat until water is gone.
3. Scoop seasoned beef into a baking pan. Add tomatoes, jalapeno, cheese, and tortilla strips. Mix the contents of the pan until completely intermingled.
4. Bake 10 minutes at 350 degrees.
5. Remove from oven and serve in bowls, with a spoon of sour cream on top.
This is a really simple dish, easily made by even lazy cooks. It's really good. Depending on how much you like heat, you could add a third jalapeno pepper or even substitute your favorite spicier pepper. The tortilla strips add a lot to the dish, but if you're not at the wheat rung yet, the pie still tastes good without them.
Not terribly fancy, but what I made for dinner tonight--and one of my MIL's favorite dishes to make DH and I when we come over (my inlaws low-carb too).
