    I put curry spice in my egg salad and it was AWESOME!

    No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

    Changing.... Ive had curry in my chicken salad before Atkins... was incredible. YUM!

    (Modified OWL-moving up rungs for convenience when travelling, keeping carbs moderate)
    Foods I cannot have-
    Black beans.- instant headache and upset belly.
    spaghetti squash mixed with tomatoes- ravenous

          Oh yes, please do! I'd love to try a new recipe with all this powder I have now.

            I make a mean curry chicken:
            chopped onions, grated ginger, ginger, curry powder... cook through. once it's all cooked, i drop in a tablespoon of sour cream, and let it melt in the heat... yummmmmmmmmm

            can i get more details on the egg salad? it sounds great!

              Oh my goodness... you drop in the sour cream, and let it melt in the heat....???? omg yum...


              Ah, all I did was make up some egg salad from 3 peeld, mashed boiled eggs and 1.5 tbsp mayo, and then I put about 2 tsp of curry powder in and ate it... it was surprisingly good.

                so, mushed-up hard boiled eggs... plus mayo and curry... i think ill try that

                oh, and the curry chicken really impressed me, it was soooooooo easy!
                4 ingredients: onion, fresh ginger, curry and sour cream... yeay!!

                  here you go babycakes



                  1 package of boneless chicken thighs cut up into bite sized pieces (you can use breast meat but be careful it really over cooks fast)
                  1 onion diced
                  5 cloves garlic smashed
                  3 tbl good madras curry powder
                  1 tsp cumin
                  1 tsp hot chile powder (optional) or one finely minced habanero pepper (this is if you like the heat if not leave it off)
                  1 inch piece of ginger grated fine
                  1 tomato cut off the top squeeze the seeds out and dice it up
                  2 large red bell peppers
                  1 can of coconut milk (if you are on induction just use 1/2 of chicken stock mixed with 1/2 cup heavy cream)
                  about 1/2 cup chicken stock (I use knorr chicken cubes)

                  saute onions,ginger and garlic in oil the add the ginger, tomato, peppers and spices saute a little around the pan until the aromas are released...then add the chicken saute until it is all coated and about half way cooked..now add the chicken stock bring to a boil then add the coconut milk (or cream/stock mix) heat through taste for salt add if needed and that is it

                  this is so good and you can play with it ..increasing or decreasing the spices as you like ..or the veggies ..or the meat you can use this recipe for big prawns as well it is awesome!!!

                  make this recipe yours ..I love it actually scooped into romaine leaves and eaten like a wrap with some sour cream and fresh chopped cilantro...
