  • Share your Fave Veggie Dish...

    I know it is easy to get stuck in a rut, so I was hoping we could all share our favorite veggie side dish.

    My most favoritest comes from Linda's fabulous website and is Zucchini Gratin:

    Loaded cauliflower!!! (also from Lindas site, I posted it in the veggie section awhile back)

    I also love green beans with bacon and vinegar.

    Roasted brussel sprouts.

      Roasted Cauliflower:

      Set oven to 400 degrees.

      Chop up 1 or 2 heads of fresh cauliflower, and put in a glass baking dish. Drizzle with olive oil, and cut up 1/2 stick of butter, and a sprinkle of chile powder. Stir it around every 10 minutes, until it's browned. I got this idea from Barbde Soo tasty.

        Miss Phode, would that work with frozen caulis as well? Or just fresh?

          I like the basics, but some au gratin dishes are pretty good if you make them low carb. My favorite though is zucchini sauteed in butter....Mmmmm...

            Green beans one of two ways...gives the same taste, slightly different textures...

            In wok or 400 degree over, green beans tossed with olive oil, garlic, and some fresh ground black pepper, bacon if you want...

            Either way, stir occasionally, and cook until edges start to brown. In wok they turn out softer, but both ways they are so good, and so simple, too. I make a batch of these in the beginning of the week and keep em' in the fridge, they make a great answer to the chip craving, and even taste great cold!

                The simpler the better, imo:

                Faux mashed sweet potatoes: take a can of 100% pumpkin puree. Spoon the pumpkin into a microwave safe bowl. Nuke it on high 1-3 minutes or until it is steaming hot. Take it out of the microwave, stir in a couple tablespoons butter, salt, pepper and a tablespoon heavy cream. Serve. Goes great with roast turkey, roast chicken and pork chops.

                    Gosh, I can't pick just one!

                    Roasted Asparagus with olive oil and garlic (roast til the tips are crunchy) and then dipped in hollandaise sauce.

                    Fresh Spinach sauteed with bacon.

                    Green beans steamed with bacon.

                    Mixed baby herb salad with mushrooms, cucumber, mexibell peppers, freshly grated parmeseano reggiano redwine vinegar and olive oil + a little blue cheese dressing mixed in.

                      I love grean beans sauteed in olive oil w/ a little butter and garlic. Add crumbled bacon and finish off with a little shredded cheese and let melt.

                          Chopped cabbage sauted quickly in a generous amount of butter and Montreal steak seasoning blend (which is coarse salt, red pepper, black pepper, garlic, and paprika mostly) until just the point where the green leaves take on that ultra-green color but are still relatively firm.

                          Magnificient alongside either italian sausage or kielbasa. DH, veggie-hater, loves this.
                          No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                              Oh and DH makes a mean low-carb insalata caprese.

                              He slices up fresh mozzerella (the kind they sell in the gourmet cheese case at grocery) into medium slices (about how you'd dice a tomato), then he dices up a vine ripened tomato or two the same way. He puts a tomato slice on each mozzerella slice, and makes this ring around the plate, and then drizzles this vinagarette he makes (from basalmic vinegar, fresh basil, and olive oil--I know, basalmic vinegar, but we're not on induction) over the tops of them.

                              Delish! It's a tomato paradise.
