    How can I find out how many carbs/cals my mom's homemade alfredo sauce has?? It has light cream, butter ,and parm cheese only.....

      Here's the secret to a really kick *** low carb alfredo.

      Saute chicken in a skillet. Deglaze the cooked chicken juices and the crusty bits in the pan with chicken broth, a few tablespoons at a time, and let that sizzle on high-moderate heat until it's just a thin film of thick liquid. Add cream and more broth to that slowly, stirring and scraping constantly and letting big clouds of steam come up. You want a well flavored thick liquid that has a chance to evaporate and condense. Season the liquid to taste with white and black pepper, and maybe a bit of garlic powder (but count the carbs on the garlic powder).

      To the nice thick deglazed liquid (evaporated cream and broth), add finely grated cheese at the last minute before serving. Don't overcook the cheese into the sauce or it will go stringy. A sharp cheddar, Parmesan or Asiago works well. If the sauce still needs thickening, you can whip in some psyllium powder, ThickenThin, xanthan gum or guar gum.
