  • Wednesday-What's for Dinner????

    So what are you having for dinner tonight? I need some good ideas. I am totally blocked for ideas. Trying to incorporate Atkins with Weight Watchers (my daughter is on this program). Totally blank .Thanks!!!

          I'm having a (boring) chicken breast with (boring) broccoli because I'm on (exciting) pre-mainenance and using most of my fat at lunch. But that actually would work well for the two of you, because you could add a bit of butter, hollandaise or cheese, and she could add some ww bread or plain baked potato (if my understanding of WW is right).
          What is it, a RACE? It's coming off, right????

            Pasta alla Norcina for the boys (that's pasta with cream, wine and sausage sauce). I'll have the sauce with some veggies or shiritaki noodles; frittata with peppers, and agretti, which is a cool seasonal veg that I'm not sure if you get in lots of places -

              DH and I are cooking dinner for the inlaws. We are making salmon filets stuffed with shrimp pesto stuffing (pine nuts, basil, shrimp) and shrimp curry (using grated cauliflower for rice). DH has a gourmet background, and I just kinda play prep chef.


              On another note, I just finished one of the easiest, most satisfying lunches I've had in a while. Last night, I grilled up 3 packages of thin cube steaks seasoned with Montreal Steak Seasoning (2 beef, 1 pork) on my George Foreman because I needed to cook them up before they went bad. Today, I put two small ones in a bowl, nuked them for 30 secs, then put some green pepper marinara sauce and shredded mozzerella on them and then nuked them for another 30, then topped with grated parmesan. It was like chicken parmesan, only beef. I was surprised at how well it came out.
              No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.
