  • Sancocho for Heidi

    2 pounds beef, cut as for stew
    1 pound pork, cut as for stew
    1/2 pound smoked ham diced
    1/2 cup basic Sofrito ( chopped tomatoes, onions, green and red peppers, peeled garlic cloves, cilantro or chinese parsley, chopped or processed. You can add olives and pimentos).This Sofrito can be used for other dishes.
    1/4 cup tomato sauce or chopped tomatoes
    1 pound each calabaza (Pumpkin), yautía (taro root), malanga, ñame(yam) and cassava (yucca), peeled and diced in cubes
    1 green plantain and 4 green bananas, peeled and cut in 2 inch rounds
    2 chicken cubes
    1 beef cube
    Salt and pepper to taste
    Bijol, a teaspoon, for color Bija is derived from the achiote plant. Can be bought at Latin Markets.

    In a big soup pot, combine 6 quarts of chicken or beef stock, or water with the beef, pork and ham, the Sofrito and the Tomato Sauce. Cover and bring to a boil. Reduce the heat to medium, cover and simmer for 30 minutes or until the meat is tender. (This Sancocho can be prepared with chicken, but then, the procedure is very short because you can boil the chicken with the vegetables and tubers, at the same time.)Add the remaining ingredients and bring to another boil. Lower the heat and simmer, covered, for 45 minutes or until the vegetables and tubers are cooked and the soup is thick.

    Plantain/Bananas can be removed to make more Atkins friendly..but I would keep in recipe for flavor..just dump bananas/plantains after its prepared.

    That sounds so delicious. one of the reasons I loved growing up in the Bronx. i was so luck y to have so many different types of food everywhere I looked. Cassava is pretty high in carbs isn't it?

        It is but for those in maintenance, it should not be a problem..and this makes a few servings, its not a single serving.

        And hey I am from East Harlem..I now reside in NJ..But I still work in Midtown Manhatten..

          I live in Amity Harbor, near Jones Beach on Long Island. I was in Jersey for about 4 years, I was stationed at Fort Monmouth, down the shore a little. I'm sooo happy to be back in NY.

          My ex is Colombian and his (only) redeeming qualities were that he could cook up a storm and dance. Ox tail soup, mazamorra, steaks, arepas, i'm salivating, lol. I still go to Jackson Heights and Sunnyside to eat sometimes.

            THANK YOU SO MUCH THIS WILL GO RIGHT IN TO MY BAG SO I CAN GO GET ALL THE INGREDIENTS TODAY!!!!

            Thank you so much!!!!! This was Panamanian soul food when I lived there! My recipe is different I will post it for a comparison but yours sounds fantastic and I will try to bring to work tomorrow my coworkers will love it I am sure!!!

            with a soup/stew like this to have a few pieces of a starchy veggie in at the end of OWL or pre/or regular maintainance is fine .....

            yes cassava is high in carbs but the point is to learn as you go and I am still learning ..I think it is important people realize that when you do get to this point ...and my God if I can anyone can!!!.... you need to start branching out and not like some people have said ...become carbphobes!!!!

              here you go this is the one I learned in Panama ...no ham though and I really like that idea talk about bumping the flavor up a bit!!!!

              Ingredients:

              1 3-3 1/2 pound chicken

              3 lbs of beef neck bones or beef short ribs
              1 lbs of cubed pork
              2 sweet red peppers diced up
              2 lb yucca root, peeled and cut into 1 inch cubes
              1 lb yam peeled and cut into 1 inch cubes
              2 large plantain peeled and cut into 1 inch slices (not too ripe)

              1 bunch green onions coarsly chopped (white part only)
              3 carrots scrubbed and cut into bite size pieces
              3 ears corn cut into 1 inch pieces
              1/2 cup chopped cilantro
              2 quarts of Chicken Broth

              1 packet of Sazon
              Salt and Pepper

              I use a big dutch oven just toss everything in and cook it all day in a preheated oven at like 275
              or toss in the crock pot

              I think if a person wanted to you could for sure substitute some of the starchy veggies and instead toss pumpkin, cabbage more onions whatever it is just a nice big hardy stew that is really truly a soul food!

                        fking awesome girl!!! OMG put 30lbs in the grocery cart when you go next time and just look at it ...I used to do that with every 10lbs it was so mindblowing and such a boost for the next 10!!!!
