  • Italian veggie salad

    I'm not sure, but I might be mixing up two recipes: Italian pasta salad and Marinated veggie salad.

    Does this sound good to anyone else? It IS good, but I'm supposed to take it to a picnic tomorrow and my (veggie hater) DH says it's too weird.

    broccoli flowerets
    cauliflower flowerets
    red pepper
    yellow pepper
    green pepper
    canned black olives
    standard stuffed green olives
    cheddar cheese mini chunks (like chocolate chip size)
    venison summer sausage (def a stronger flavor than pepperoni, but there's only 10 slices quartered for whole giant bowl)
    Homemade Italian dressing: 2/1 veg/olive oil, 3/1 tarragon/rice wine vinegar, italian seasoning blend, mashed marinated red pepper, fresh garlic, minced onion, salt, splenda

    What do you guys think?
    What is it, a RACE? It's coming off, right????

    I make that all the time. My family loves it. I use mozz. cheese and peperoni. I would take it for sure

      I think it sounds amazing... delicious!
      No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

          Well, it was a hit...but two did comment on the cheddar vs mozz. I don't think the venison stood out at all. I've got lots left for the week too, going to throw a chicken breast in it for breakfast since I didn't get much at the party (chasing kids)
