    In Barb's honor, lets use this thread to post any and all low carb recipes that have Spinach in their ingredients! I'll start with this one

    SPINACH MEATBALLS

    1 1/2 lb Ground beef
    1/2 c Chopped onion
    1 Egg
    1/4 c Grated parmesan cheese
    1 pk Frozen chopped spinach (thaw/drain-10 oz)
    1/2 ts Salt
    1/4 ts Pepper
    1/4 ts Garlic powder
    1 c Beef broth
    8 oz Tomato sauce
    1/2 c Dry red wine

    Mix all ingredients, form small balls, place in 1 1/2 qt casserole. Mix broth, tomato sauce and wine. Pour over meatballs. Bake at 350, covered, 40-60 minutes. Great for parties served in slow cooker.

    Hot Artichoke Spinach Dip

    1 c. chopped artichoke hearts
    1/2 c. spinach
    8 oz. cream cheese
    1/2 c. grated parmesan cheese
    1/2 t. crushed red pepper flakes
    1/4 t. salt
    1/8 t. garlic powder
    dash black pepper

    Boil spinach and artichoke hearts in 1 c. water for 10 minutes or until tender. Drain in colander.

    Heat cream cheese in microwave til creamy, add spinach and artichokes and stir well. (mash veggies)

    Add remaining ingredients and combine.

      Oh, this sounds good Its' from the "I love Spinach" cookbook

      Mushroom-Spinach Frittata

      Lots of fresh mushrooms, tender spinach leaves and creamy butter makes this dish irresistible.


      3 tablespoons butter
      1/2 small onion, minced (1/4 cup)
      8 ounces fresh mushrooms, sliced
      1 1/2 cups fresh spinach leaves, thoroughly washed and chopped
      8 eggs, well beaten
      Salt
      Freshly ground pepper
      1/4 cup freshly grated Parmesan cheese




      Melt butter in a large cast iron or ovenproof skillet over medium-low heat. Add onions and cook 3 minutes. Stir in mushrooms and cook until limp. Add spinach and cook another 2 minutes. Pour eggs on top of spinach in skillet; cook over low heat until eggs are set, 6 to 8 minutes. Sprinkle with salt and pepper. Place skillet under broiler about 6 inches from heat source for 2 to 3 minutes. Remove from oven. Sprinkle top with Parmesan cheese; cover and allow to stand 2 minutes before serving.

          Fabulous Cheese Spinach

          Note: Makes 4 servings. Total Carbohydrates: 24, Carbohydrates per Serving: 6

          Ingredients:
          1/2 cup grated gruyere cheese
          1/2 cup ricotta cheese
          1/4 cup crumbled gorgonzola or blue cheese
          2 Tbsp. freshly grated Parmesan cheese
          2 Tbsp. chopped fresh dill
          1 large egg yolk
          2 Tbsp. extra-virgin olive oil
          2 10 oz. packages of fresh spinach, coarsely chopped.

          Preheat the broiler to medium. Lightly butter 11-by 7-by 2-inch baking dish. Mix the cheeses, dill and egg yolk in a large bowl. Heat oil in a large pot over medium-high heat, and then add the garlic. Stir for a minute until fragrant. Pour into the prepared baking dish. Add the spinach to the pot and sauté until wilted. Transfer spinach to strainer; drain well. Pour over the garlic in the baking dish. Toss to coat with the oil and spread out evenly. Sprinkle with cheese mixture. Broil until cheese is golden on top, and the spinach is heated through.

            Oh MOG! I think I love you!! Woohoo! I love my spinach! Those all sound awesome!
            And guess what?? I bought some frozen spinach to do a science experiment with LOLOL!!

                    For a quick and simple dish

                    frozen or fresh spinach
                    cream cheese
                    garlic powder
                    onion powder
                    salt and pepper

                    Mix it all up and serve.

                        I can't leave out wilted spinach in bacon drippings, inspiration from MOG. Fry up some bacon, leave a little dripping left in the pan, throw in a cup or so of spinach leaves and stir them around on medium until wilted, only a minute or two. You can leave the bacon in when you cook the spinach and then a few eggs on top and make a scramble/omelet out of it.

                          Yum everything sounds so good! I love spinach too Barb! I could eat it every day! Those little quiche thingy's you made look awesome. I like the quiche recipe in the back of DANDR with spinach and gueyre (I don't know if I spelled that right) cheese!

                          I also like fresh sauteed spinach in an omelette with cream cheese and crab meat and baby shrimp--I think I've died and gone to heaven when I have that!

                            I like a wilted spinach salad with dressing made from bacon grease, dijon, and something else I'm not remembering. The recipe is at home. Really good if you throw in a little blue cheese and hard boiled eggs.

                              I just saw this in SheKnows LowCarb magazine

                              Simple Sauteed Spinach (in the Indian cuisine section)

                              1/2 tsp coriander seeds, finely ground
                              16 ounces bagged frozen spinach
                              1 tsp olive oil
                              1 cup sliced onions
                              1 tsp ginger (sliced and chopped finely)
                              1/2 tsp cayenne pepper
                              1 Tbs yogurt

                              Cook spinach according to the directions. Drain and squeeze well to remove as much water as possible. Chop and set aside.

                              Heat oil until hot but not smoking in a 12 inch saute pan. Add onions, ginger and coriander. Stir to combine. Saute over medium low heat for 5 to 6 minutes until onions have wilted.

                              Add spinach to pan and stir to combine. Lower heat and cover. Cook for five minutes.

                              4 servings
                              10.4 g carbs per serving
                              5 g fiber
                              5.4 net carbs
                              5 g protein
                              2 g fat
                              1 mg cholesterol
                              113 mg sodium
                              68 calories
