    missy, which enchiladas recipe are you talking about? There are several on her lists. Just want to be sure to try out the right one.

    I've copied off several off the recipes for my own personal lowcarb notebook. But am trying to keep to an extra strick Induction for the moment and am afraid of trying anything with sweeteners. :anger

          OK, I made the muffins, they were a HIT with my family. Even though I used Atkins Syrup and they probably weren't as sweet as if you used the Da Vinci's.

          I can't eat them...... I mean I CAN, but shouldn't.

          I ate one out of the oven, one when they cooled and one for breakfast the next day (yesterday).

          I craved crap and was hungry ALL DAY. I ate induction legal food only, but ate so much I gained 2 POUNDS!!! (even after a bathroom visit)

          It could have been a coincidence, but I am not willing to risk another day like that :sadblinky

          It could have ben the syrup, it say zero carbs, but perhaps I am overly sensitive to the sugar alcohols

            OMG! I didn't think about the muffins causing cravings! I have been having a terrible time today- wanting everything! I have eaten the muffins yesterday and today too! I hope that's not it- cause I love them! And I love what they do to keep things movin along like they should!!

              See -- I wasn't joking about my obsession! I just made some more, but I put zucchini in them too . It raises the carb count a little, and they are still good, but not so good that I want to eat them all at once! DO not add melted chocolate (I used the unsweetend baking bar and a couple packets of Spenda) -- I could not control myself after those. And to make matters worse, (or better, depending on your perspective!), I had some zero carb whipped cream on them, and they were just tooo good. I will not be making those again -- not even for a holiday!

                Well, now that I know I won't eat them, I made another batch.

                This time I added 1/2 cup of plain pumpkin, 1/2 cup of mayo and 1/8 cup of granular splenda.

                I increased the flax to 1 1/2 cups..........

                Man they smelled good, and the girls ate them up like they were candy!!

                    I just made these again (by request of my kids and hubby LOL)

                    This time I made them with butter instead of oil (I want to limit the hydrogenated crap)

                    I also added 1/2 cup of pumpkin, some ginger and an extra 1/4 cup of flax meal to make up for the extra moisture from the pumpkin.

                    They are better than EVER!!

                      Ok, I printed out this recipe as soon as it was posted and I am FINALLY getting around to making them. Is the batter supposed to be really thick?

                      I'll let you know my all-important review in about 20 minutes!! LOL

                        Eh....they were ok. They kind of tasted like flax cakes to me. I think I really needed to use some other syrup than what I had on hand...Artisan's Caramel.

                        They didn't rise much, so they were kind of small. It could use some splenda...anyone tried that?

                          I always make a double batch so I can make my muffins 2x the size. The little ones don't seem very satisfying. I've also started to make these with less than 1/2 the recommended oil because I wanted to drop the calories a bit. They come out great... and have almost 1/2 the calories.

                            Yeah, I think next time I am going to use a better flavored syrup and double the recipe. My gf really liked them. She thought they tasted just like bran muffin, which I'm not a big fan of.

                                I never have expensive flavoured syrups in the house so I use 10 ml Hermesitas Liquid (enough for me) and adjust the water content. The ammended recipe is below. I live in UK but use a measure from Lakeland Plastics that shows US cups.

                                Hermesitas Liquid is the only liquid sweetener available in UK - you have to order it through an independent Chemist - Boots do not stock it. It has zero carb content.

                                KIM'S FLAXMEAL CINNAMON MUFFINS
                                3 eggs
                                1/3 cup oil
                                2 teaspoons Hermesitas Liquid
                                3 tablespoons water
                                1 tablespoon vanilla
                                1 cup flax meal
                                1/2 teaspoon baking soda
                                1/2 teaspoon baking powder
                                2 tablespoons cinnamon (the amount is correct)

                                In a medium bowl, beat the eggs with a fork. With a fork or spoon, beat in oil, syrup, water and vanilla. In small bowl, combine remaining dry ingredients, then stir into egg mixture. Let stand 5 minutes. Spoon into 12 well-greased muffin cups (without papers). Bake at 350º 12-15 minutes, or until they are lightly browned and seem set to the touch. Remove from tin at once to cooling rack. Store in refrigerator.

                                Makes 12 muffins
                                Can be frozen

                                Per Serving: 85 Calories; 7g Fat; 4g Protein; 4g Carbohydrate; 3g Dietary Fiber; 1g Net Carbs

                                These taste remarkably like bran muffins, but with a lighter texture. Mine had pointy peaks on them, so they look a little funny, but they taste fine. They sliced nicely even when still hot from the oven. They freeze quite well. I thawed one and reheated it very briefly in the microwave and it was perhaps a bit spongier, but still good.
