  • BBQ Suggestions

    Hi all

    My friend is holding a BBQ next Thurs as England are playing Trinidad and Tobago in the world cup ( we went to Tobago in March for her wedding ). I was wondering if anyone had any ideas of what I could take with me to put on the barbie? I'm in Extended Induction and would love to have Chicken Skewers with Peanut Satay sauce...but I'm not allowed!!!

    Did Atkins on and off from Feb 2005 until April 2008. Fluctuated between 15 st 1/211lbs and 11 st 1/155lbs.
    On different weightloss programme from 28th May 2008 start weight 14 st 11/207lbs.
    Current weight 10st 3lbs/143lbs.
    Ultimate Goal Weight 9 st/126lbs.

    My DH has been grilling onions at everyone's barbeques!! He peels off the onion skin, slices the onion in half, drizzles olive oil on the onion halves and places them on the grill. They are AMAZING!!! Onion's kinda carby so I always just have one, but we always bring sausages too, so I fill up on a couple of those, a bunless hamburger, and salad (another great thing to bring!). We keep it simple and blend right in with our "bread-eater" friends.
    No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

      here you go my favorite Caribbean style marinade (it is actually a Cuban recipe) great for chicken skewers!

      1 Cup Extra Virgin or Virgin Olive Oil
      10 large cloves fresh Garlic,
      ¼ cup fresh Cilantro fine
      ½ teaspoon ground Oregano
      2 teaspoons ground Cumin
      ⅛ teaspoon Ac'cent Flavor Enhancer (MSG optional)
      1 teaspoon Salt
      1 teaspoon ground Black Pepper
      ⅓ cup fresh squeezed lemon juice
      1 Cup fresh squeezed Lime Juice (Sour Orange Juice, ok)

      toss in the blender then marinate meat of choice... this is wonderful on chicken wings put in ziploc bags and leave them to soak over night...if you do boneless/skinless breasts only marinate 1 hours
      great on pork and beef as well

          I think it is like the national marinade of Cuba it is called Mojo (MO HO)

            Mmmm sounds yummy Heidi!! Will see if I can find those ingredients.

            Could you take a look at my ice cream post too?

            I think I might make some atkins burgers with cheese and bacon too!!

              If you cant find the ingredients, or in a pinch; GOYA makes a great MOJO marinade all made and bottled for ya. It isnt half bad.

              It is in the authentic food section in the grocer, the brand GOYA that makes beans ect.

              I use it in a pinch, and everyone seems to love..

              Iknow it doesnt hold a candle to homemade, but works.

                This is my abosolute favourite bbq recipe, and it's dead simple.

                amounts can be whatever you like, for how many ppl you are feeding.

                Cut up the following in 1" or so chunks.

                yellow zucchini (optional..they are very expensive here right now. almost $3 each!)
                green zucchini
                onion
                green, red, yellow peppers

                toss it all in a ziplock bag (great if taking it to a party) or a bowl and cover with a bit of olive oil and mix to cover all. add salt, pepper. put in an grill pan (i use disposable ones). grill for about 15 mins stirring it around until all the veggies are cooked thru.

                I also made this the other day and i sprinkled it with lots of parmesan cheese (the canned kind) and it was awesome!

                I've made this for friends it gets rave reviews..even from non veggie lovers.
