    I know I know. Something as inoccuous as bell peppers and *I* Needhelp? My story is that as a young teenager... bellpeppers (esp green) gave me horrific reactions. (picture vomiting for hours. yes hours). A few weeks ago, I had a thai dish with peppers and just ate around them, trying one. no reaction at all. not even burping. so that tweaked my curiosity. I had a few more pieces that same week of lightly cooked green peppers. again no reaction. SO I figured it was time to buy some and see if I was going to lose my cookies at home. Picked up one red and one yellow bell pepper. Had half the red one on the grill one night and the other half the next day raw for a snack. no reaction at all.

    So whats my malfunction.... I have no idea what to use these in for cooking or even how to cook them! I dont know what they go good with and Ive never cooked um!! They affected me for so long that the last time I had some before now was well over 15 years ago and I dont know what to do with um!

    You could have had a food sensitivity that you "grew out of".

    Anyhow what to do with those peppers......

    The Spanish simply slice them and sautee them in olive oil for a side dish. Or you can use this mix to fill an omelette.

    You can slice off the tops and stuff them with a meatloaf mix and bake them. Or you can stuff them with chicken salad and bake them.

    Slice them and use in stirfry.

      Stuffed with chicken salad and baked???? oh do tell. Ive got chicken in the fridge that needs used up as its already cooked. Do youmake it like normal chicken salad? mayo, onions, chicken? what temp howlong? top with cheese? cover and bake? uncovered?

      (I feel like such a cooking newbie!)

      Meatloaf sounds good too. I may have to buy some ground meat this week!

        Yeah, in parts of the US South, they have a dish called "Hot chicken salad". It's basically chicken salad that's baked. I've used turkey in place of the chicken, leftover baked salmon, etc. It's a good leftover user-upper and a good "I want something hot for lunch" meal---just mix it up, pack it, then nuke in the microwave at the office.

          well Ill be danged!!!! I never heard of such a thing. This is on my list of things to do this weekend for sure! I already love the recipes from Lindas that mix sour cream and mayo to bake because I love the texture it gives a dish, this could easily become a new favorite of mine. I cant wait to give it a shot. I might just have to grill it instead of baking to give it that grill flavor I love!

            (Spicy) Italian sausage, peppers & onions. Fry it all up in a pan (I cut the sausage lengthwise).
            I'm not a bell pepper fan, but I dig this.

              I do the same with the onions & hot italian sausage....or some steak-um (shaved steak), onions, peppers, and cheese...mmmm...

              I use them a lot in my eggs. I dice some pepper & onion, sautee it in butter, and then throw some eggs in there and scramble it up with pepperjack cheese...one of my favorite breakfasts!

                  I like them stuffed with the meatloaf like recipe that Megs mentioned. I also like them raw used to dip with. They're great chopped up in a salad as well. We like them chopped small and sauteed with onions and then added to a ham and cheese omelet too!

                    On my website (link below), I have a "basic casserole" recipe that uses cooked meat. You can follow that recipe, substitute cooked sausage meat or a combo of cooked sausage and ground meat, and stuff that into your peppers.

                    Another vegetable that stuffs well is tomato---especially with the hot chicken salad mixture. I save the tomato innards and use it in another recipe or I chop it up and add it to the chicken salad mixture.

                      I actually can eat the red and yellow but not green. I read the green ones aren't fully ripened and give some people indigestion. I would be some people, lol. i like roasting them on the grill. I jst chop them into big chunks. or on skewers. I also saute them in oil or cook them with sausage.

                        I absolutely ADORE raw bell peppers, yellows are my favorite, but green, red, and orange are great too. I like to slice them up and have them on my salad for crunch and flavor. The green ones IMO have the strongest flavor. The yellow, red and orange are sweeter to me.

                        I do like to cook with them as well for the flavor they add.. But, here's the weird thing...once the pepper is cooked and starts to get soft, I really don't like them. I can tolerate them, but usually will pick around them.

                          Megs... you are my favorite person of the day! I made a stuffed pepper (orange) with chicken salad last night. Tossed it on the grill (in a mushroom can ring to hold it up) and let it cook nice and slow. omg it was SO good!!!

                          You guys are the best!! Ive got tons of new ideas for my new found veggies!

                            I love red bell peppers stuffed with cream cheese and all the other ways people have mentioned here ...except I have never eaten a steakum what the heck is that anyway? or was it a typo?

                              When I was a little girl, we had a neighbor from Hungary. She used to plant peppers every summer. Anyhow, she said when she was a little girl, they used to eat them like we would eat apples for snacks and dessert!

                              I have to admit, red peppers are very sweet and I have them for "dessert" sometimes with cream cheese, Brie or Camembert!
