  • Need A Good Meat Loaf Recipe

    Hey everyone, I really need a good meatloaf recipe and can't find one in the recipes section. I have a pound of ground beef and pork, I bought a bag of Pork Rinds. I have to make mine separately because I'm going to add some sweet onion and green pepper and my husband and kids like their with nothing in it (I have to please everyone around here!) I am not sure how much of the crushed Pork Rinds to use and should I sautee the onions before I add them in?

    I just sautee chopped onion and celery until they are soft. Cool it. Mix it with the ground meat and an egg or two. Form it and bake it. I don't add pork rinds to anything I cook.

      I know it's crazy, but the infamous "Whoosie pie" gives me the feeling of meatloaf. That with mashed cauliflower - Yum! Pure comfort food

          Here is my favorite meatloaf recipe. I have worked it around over the years and this is my final product.


          2 lbs 80/20 grade ground beef (fresh unfrozen)
          1 whole onion, processed
          1 whole red bell pepper, processed
          1 packed cup fresh baby leaf spinach, processed
          1/4 cup fresh raw carrots, peeled/grated/processed
          1/2 cup fresh tomato, peeled/diced/processed (I prefer roma)
          2 eggs
          salt and pepper to taste

          (optional- if you keep regular low carb wheat and fiber bread around the house as I do, process 2 slices of that before the wet ingrediants. You could do this recipe fine without it, just depends on how good a grade of beef you have and how much liquid will come off of it.)

          Mix all ingredients together and smush into a loaf pan, bake at 375 for 30 minutes. I then flip the meatloaf out of the pan onto a bread cooling rack placed on a foil lined cookie sheet. Bake for another 30-60 minutes or so, depending on however well and hard you like the outside. I will usually squirt regular ketchup on half for the rest of the family.

          The whole process the heck out of the vegetables is great for kids who don't like their veggies. They're getting the stuff they need, it's just so small they can't tell it's there.
