    My canned pumpkin says 10g carbs in 1/2 cup and 4g fiber = 6g in 1/2 cup. Is this what your can says BunnyD? I'd like to try that once I'm off induction.


    SLOW COOKER -
    Oh I absolutely love my new big slow cooker. I can fit a whole chicken (fryer) in it. I just salt and pepper the chicken and put it in breast down (keeps the breast from drying out). I overcook mine until it wants to fall apart and then I let it cool and it's real easy to pick off the bone.

    You don't have to add any water because they add water to chickens but you can if you want to. The juice that cooks off the chicken is about a cup and I strain it and put it in the fridge overnight. The next morning the fat will be on top and the rest is gelatin for soups or whatever! Mmmmmm! I do a chicken this way at least once a week.

      Im travelling so at the mercy of the food gods. BUT....I took a page out of one of the gals here (I dont remember who it was!) and headed to the grocery in hopes of finding that they offered rotissered chickens. Well I was VERY happy to find that they had a GORGEOUS salad bar with fruits and veggies that were beautiful AND had a hot bar that had all sorts of yummies. So I had turkey breast and green beans and then a 'veggie platter' made by me with green olives, cauliflower, maters, hardboiled egg and my treat, strawberries. Best part.... they offer BREAKFASTS in the morning! and they have some listed as low carb!! (meat and eggs). And all well within my perdiem. If the hotels BFast leaves things to be desired, Ill be heading to the grocery store!

        I had squash sauteed with bacon and onion and grilled pork loin chops and a slice of New York Ricotta cheesecake for dessert.

        I love my slow cooker too. I put beef ribs in it...and when I get home from work, they are falling off the bone. I like to put ground cumin in to give it a spanish flavor, and then cheese and sour cream or guacamole. I did a chicken with a small can of tomato sauce (no sugar added of course) and some onion and peppers ...that was really good as well.

          Thanks for the inspiration guys. Tonight I had cold turkey and mayo, cheesecake with orange ginger rhubarb sauce. Looks weird, but I did have LOTS of veggies earlier in the day.
          What is it, a RACE? It's coming off, right????

            Too right... shiritaki noodles are great value carb/cal-wise!!

            Well Miss Phode... I just rather threw it all in the pan without much care, as it was only me padding about the house... so, you know, sort of quick and comfy!

            I rinsed the noodles really well (that helps alot with the vaguely fishy tast/smell) then cooked them in water for a few mins. Sauteed a handful of bacon bits in a little olive oil, a clove of garlic (later removed) and a chili. After a bit added a spot of white wine and reduced it to about half. beat up two eggs and added a handful of parmesan... also lots of black pepper (even though you don't usually use both pepper and chili... it was good). Instead of adding the egg mixture to the noodles, as one should with carbonara, I put them into the hot pan with the bacon and turned off heat immediately. Then put over drained noodles.

            There was a little too much egg to cook with the heat of the noodles, so I nuked it for a min... just until the egg started to thicken but not dry out. A dry carbonara is uber-yuk!

            It wasn't quite like real pasta...but the flavours of the egg, bacon and wine were strong enough to cover any funny taste the noodles might have. Not too bad, actually. Will do it again sometime.

              I'm gona have...

              Home made burgers (mince, onions and some seasoning) topped with bacon and montery jack cheese served with green beans

                I'm going to have hamburgers as well!! With lots of salad!! Since the weather is hot it's nice to eat fresh salad!

                    When I was in Providence this past week I went to Fall River Mass and bought 5lbs of Chourice at Genes market...when I tell you good this is the best and any of you from that area who may read this if you have never gotten your Chourice (or chourico) from Genes go get some ..they use NO FILLERS AT ALL AND NO SUGAR ..in fact they look at you in horror when you ask because "if you use the right paprika you don't need sugar!" they use the right paprika ..anyway...I just loaded the Dutch oven with the following just dump it in

                    Chourice and peppers (or with my Providence accent Chourice and Peppahs LOL)

                    in a crock pot or dutch oven (with oven set at 300 to start) put the following

                    2 sticks of chourice (I love the hot one) skinned and crumbled
                    2 onions sliced
                    2 bell peppers (I used red but green is traditional) in strips
                    6 fat cloves of garlic smashed
                    olive oil about 1/4 cup
                    good dry red wine about 1 1/2 cups or you can use half that mixed with water ..but why?

                    you cook this for like 90 min on high in the crock pot then reduce to med and simmer all day...same in the oven start at about 300 for 90 min then reduce to 275 for the day stirring once in a while ...

                    if you have too much liquid in the end just increase the heat enough with the lid off the pot to cook it down

                    this is very rich and great with eggs or salad I have wrapped it in romaine or low carb tortillas.... it is Portuguese sloppy joe!!!
