  • Megs I tried the crockpot nuts!!!

OMG they were wonderful ..and I was so good about only eating a few at a time so my tummy was fine...(I have a history as you know of nuts giving me a belly ache but it is because of over use not the nuts themselves I am sure of it)

I did one batch with your recipe and then of course you know I had to try to curry them so the second batch I did mixed raw nuts tossed with butter and curry spices ...OMG my house smelled like heaven and my tastebuds did a happy dance

you should try the curry ..I added curry, cumin and chile to them I also ground some Kosher salt to almost powder and tossed that it ....

I can see these will be part of my Christmas gift baskets to people they are sooo good!!!

    thank you for the idea

I've been experimenting with the crockpot nuts. You can dry roast them, but they taste 100 times better if you mix with with alittle olive oil or butter while they cook. Also I've been using egg white to glue the spice mixtures to the nuts.

Oh yeah, caution about roasting macadamia nuts....those boogers are so high in fat that they burn easily. So I roast some other nuts like almonds, about half way through their cooking time, I add the macadamia nuts to the pot and cook the rest of the way. Once you add the macadamias, you need to stir the nuts every 15 to 20 minutes or else they'll burn.

I buy a spaghetti squash every couple of weeks during the winter and fall and I save the seeds. Anyhow, I roast them in the crockpot with a mix of nuts (butter or olive oil, salt and pepper). Delicious!

BTW, Heidi, try the ricotta cheese recipe in the other thread!

do you shell all those seeds or toss them in to the pot with the shells on? I have a bag of raw shelled pumpkin seeds I was going to try....

ok looking for the ricotta as we speak how cool you made your own??? I have made goat cheese before and it was insanely good..but then I had a friend with a goat who did not like the milk ...so it was a score for me I took all she would give me!!! alas that is gone now ...

Shell the seeds????? ARe you kidding? I don't have that kind of time! I just toss them in. The shells were crunchy enough that I was able to eat them. I'm always suspicious about the roasted pumpkin seeds sold in little packets because I've read the ingredients and I don't think pumpkin seeds have cornstarch naturally..

            The ricotta recipe rocks!

              I like the shells

what I buy and use for sauces and stuff are the raw shelled seeds from Trader Joes ..they are nothing but raw pumpkin seeds....

I agree about the little bags they rip my mouth up anyway and have way too much salt you can not taste the seed inside!
