  • Unsweetened Chocolate??

    Hi Ya'll

    I'm curious about unsweetened chocolate. I've seen it listed as an ingredient in several recipes. When is it okay to have it? I'm on extended induction at the moment and would like to use it. Is it okay? Thanks in advance.

    I added chocolate on the nut rung ..but used cocoa powder during induction just a tiny amt when I was insane....

      yep cocoa powder is a spice so you can use it in induction even just count the carbs in it in your daily total. Not2late has a great recipe for chocolate cream which uses just cream sweetener and cocoa powder. Warning if you don't have great self control don't go buy cream and cocoa powder to make this cause it is very addictive.

        Unsweetened chocolate contains nothing more than cocoa and cocoa butter. Cocoa, as has been previously mentioned is induction safe (counting the carbs) . Cocoa butter is a fat- All fats are induction safe. Following this logic, unsweetened chocolate is safe for induction.

        Go with a good brand. Compared to similarly priced brands, Baker's brand is chalky and bitter. Nestle's is a much better choice. If you can fit it in your budget, Callebaut makes a phenomenal unsweetened chocolate, available from Whole Foods. Besides being of superior quality, it has a higher cocoa butter content. More cocoa butter translates into less carbs.

          omg when you talk about the better chocolates in life I swoon!!!!

          I am so happy that I never was triggered by chocolate!!!

          I never counted the carbs in cocoa powder considering the small amt used less than a carb was not worth the effort...and only saved the chocolate for the nut rung because I was not sure and never got around to asking .....I just thought of it as a nut and waited!!!

          I have found mixing cyclamates with splenda works perfectly to make chocolate anything taste wonderful!!!!

                  I can not tell you how happy I was when I realized I could actually make chocolaty things and not go into a full blown eatathon!!! as long as I avoid sugar I am fine ...and if I do have some sugar at this point in my life it has to be at the very end of the day so I can go right to sleep or I will snowball ..so I try very hard to look at it as being bad for my body and only at the rare times I feel in good control will I succomb...the same with bread ..I just have to avoid it most of the time that is for sure...anything white is the easiest way to put it ...I retain a lot of water from sugar and white flour! Salt does not seem to affect me but those two nasties take complete control
