I can't believe there's a cheese I'm iffy on, but I bought some goat cheese and I didn't love it. I cut a piece and stuck it in my mouth, the preferred way i eat cheese. Should i do something with it?

was it the tartness you did not like? I love chevre...I have actually used it half and half with cream cheese to make a cheesecake ..also I mix it with some chives and parsley and spread it ...hey little girl you can not like EVERYTHING you know
although when it comes to cheese I can not imagine not liking any I have tried so far!!

Goat cheeses vary in tartness and flavor. The imported goat cheeses tend to be more tart/sharp and have a goat-y flavor. The domestic ones tend to be milder (not as tart and not goat-y)---if fact, I've come across a few that taste like cream cheese, but are twice as expensive! Also, the quality of the goat milk affects the taste of the cheese, especially if you get the artisanal type goat cheeses. Goats who are allowed to roam the countryside and eat fresh grass, herbs and flowers have a milder tasting milk and cheese than the goats who are stuck in a barnyard, eating hay and goat food pellets.
I like goat cheese straight---out of the package and into my mouth. But it's also good warmed---in things like omelettes, sauces, etc. If you are able to eat nuts on your Atkins, you can use this recipe I adapted from a Martha Stewart one: grind nuts and season with whatever herbs you like. Slice the goat cheese into discs or form it into discs. Coat the goat cheese discs with oil, then roll in the ground nuts. Refrigerate at least 4 hours, then pop into a hot oven and bake until the nuts are lightly toasted. These baked goat cheese are great with a green salad.~Megs~

It wasn't necessarily the tartness, but it was just something I wasn't expecting I think. I love feta (not goat cheese of course), and I totally go for sharp cheese, stinky cheese, and so on. I guess it could have been the tart or sour type taste. It was also the texture. I think after eating aged for a time it was the softer pastier texture that threw me also. I love the nut recipe, and in omelets sounds good also. Very savory sounding. I like the cheesecake idea also. I love cooking. I actually don't like every food amazingly enough. I'm not a fan of liver. Scallops also turn me off if they aren't broiled. I'm a big texture eater.
I had some turkish friends growing up and we used to drink their coffee with goat cheese on the side and I loved the combination.

The fresh cheese do have a different texture. Some of them are down right grainy!
There are some aged goat cheeses, but they're getting hard to find (the fresh cheese is too stylish, I guess.)~Megs~

I like chevre, but only in small amounts and only with other foods. Bread or crackers are ideal. Since I haven't found a lc bread/cracker I like, I spread chevre on carbquik biscuits. It's nice.
As far as aged goat cheeses go, when I worked in Whole Foods, I got to taste just about all of them, and I can say, without a doubt, I do not like aged goat cheese. Chevre is about as intense as I can handle. Yes, I'm a total lightweight

Imade an omelet this morning with it. I chopped a jalapeno, threw it into the pan after the bacon, added some eggs and then the chevre on top before folding it over and I like it. It softens up nice.
