  • Whey Protein Powder

I just bought a huge jug of vanilla flavor 100% whey protein powder. 1 carb. ingredients are whey protein, soy lechitin, aceK and sucralose. I thought I had seen that this could be used as a "flour", does anybody have any recipes they'd suggest? I am going to try it in smoothies too.

    Thanks!

Alot of the baking recipes use protein powder. So you can look around for them.

vanilla is the flavor of choose according to Dand Carpender in her 500 low carb recipe book.

you can't sub it straight for bake mix though but you can make bake mix by adding a levening agent like baking powder and Naja has several recipes for the mix in her low carb cooking school topic or you can use the search feature.

Bren has a recipe for doughnuts that uses chocolate PP.

I made these Strawberry Crepes for breakfast this morning--they could be for anytime though. http://www.carb-lite.au.com/allrecip...eam_crepes.htm

It calls for soy protein...but I used my vanilla whey protein isolate instead and it was WONDERFUL! SINFUL! DECADENT! LUXUROUS! LOL

I made the cinnamon breakfast cake. I used liquid splenda (cutting carbs way down) and vannilla whey powder. Fresh it's good, kind of a different, fine crumbly texture. Would be good w/juicy fruit or other berries. Not a strong cinnamon flavor at all, even w/2T good cinnamon. Shmoozie, it froze and thawed very well.

with the oil that I drained off of it (without the frosting).....A piece missing......

Great, I'll freeze the rest. It's in the oven as we speak. I used liquid splenda (sweetzfree), and vanilla designer whey as well. I'm only coming up with 25 grams of carbs for the whole recipe. I measured out the whey powder. It came to 10 grams......that was the largest carb contributor. The cinnamon was 5 grams of carbs...

Just got it out of the oven. It poofed up really high in the center, and was surrounded by yellow oil liquid (my guess, butter). I drained it off. 1/4 of a cup came off. What is left is very good textured, like a cinnamon roll or maybe a streusel. It needed frosting, so I whipped up cream cheese, vanilla extract, cinnamon and liquid splenda. I could swear that I am eating a cinnamon roll! I give it 2 thumbs up!

Hm, mine got puffy too, but no extra liquid like that. Mine wasn't like a cin roll, more like a dry crumb cake or coffee cake. Yummy idea to frost.

                      Tried these too:

                      Hazelnut Flax Seed Meal Muffins

                      3 eggs
                      1 1/2 sticks butter melted
                      1 c protein powder
                      10 drops liquid splenda

                      dash stevia
                      1 1/2 tsp baking powder
                      3/8 tsp salt
                      1/2 c water
                      1/2 c hazelnut syrup
                      1 c flax seed meal

prehead oven to 350. beat eggs and add melted butter. continue to beat. add (one by one) protein powder, splenda, baking powder, and salt. Beat well. stir in syrup, water and flax seeds. put in greased muffin tin and bake 25 minutes.
These were very interesting to make, I used my stand mixer and the whey got kind of gummy on the bottom. And its not a batter, it's a total liquid.

That said, UNBELIEVABLY tasty. I really like flax in general, and these are very sweet and very rich. I will cook 28-30 minutes next time, the ones that got browner are better.

Thank you SO MUCH qdu, just these two recipes alone were worth the price of the jug.

                      Hugs

HHMMMM, I wonder why they turned out so different. I added a picture to the above post so that you could see. I checked it one minute and it was flat, and looked like a done cake....then I left it for a while longer, just to be sure it was done. When I came back it had poofed and had the oil ocean. Maybe I baked it to long? Who knows, but the results are great. It will be perfect with coffee in the morning.

I have made lots of flax seed muffins.....created many recipes, but got sick of them I've been without flax for a good year...... I may try again. Your recipe looks great! I guess I am flax burnt out....tee hee

When I made the cinnamon breakfast cake, I made it into muffins...the recipe made 12 muffins. I froze them and when defrosted, heated in the microwave for a few seconds. Very good. I didn't get any liquid off of mine.

Mine wasn't nearly as dark, either browned or cinnamon-darked. It was also much more level on top. About the only thing that COULD be different is a different brand of powder. My oven is uneven, and the parts that got browner are better, so I will bake longer next time. Thanks for sharing the pic, and so glad you liked it.

Hi used designer whey, vanilla flavored. My pan is small. It only made 4 servings, or eight if I cut them in half. HHHMMMM.....interestingly different results. Maybe I did something wrong? I went over the ingredients several times though, and found no obvious discrepenicies......oh well....I liked the results! I did bake it way longer than I was suppose to...maybe that s all it is!
