    Mascarpone update.

    The cheese separated from the whey. I was able to scoop it into cheese cloth and drain it last night. It looks and tastes like store-bought mascarpone, but it has a "fresher" taste and it's slightly richer.

    You need to be patient and trusting because the cheese needs refrigeration in order to separate. While it's cooling in the pot, it remains liquid, like an egg custard.

    But otherwise, not a bad recipe.

        glad your cheese turned out Megs

        MOG I did the pepper cheese with roasted fireballs chopped fine this time added just before the draining. since i don't save the liquid I'm sure I lost some pepper flavor but pressing the liquid out of the cheese like I do it wasn't watery cheese. I let it age to develope the flavor and made cheese eggs this morning and it was like making cottage cheese eggs with peppers. I liked it but I'm not excited enought to keep buying milk to make cheese. habenero jack is fine for me from the dairy farm.

              yep and even before Atkins I wasn't a fan of ricotta and didn't develope a liking for it in OWL either.

                I only ever liked ricotta much in lasagna. It's pretty bland isn't it.

                  Y'all don't give up now! Goodness, how did this thread get past me for 2 weeks! I looooooove cheese (almost as much as bacon!) but never thought of making it.


                  What weight of cheese will a $3 gallon of milk cost? Some fancy cheeses are pretty pricey in the store... can you get a sample from a fine cheese and turn the milk into a pound of it?

                  Not being much of a ricotta fan, I'd prefer cheesier flavor. But I've gotta try these easy-looking techniques. Especially the chocolate cheese mousse thing!

                  Oh, MOG - here's an idea - those habaneros might be acid enough to sub for lemon/vinegar/tartaric... can you juice some and see how it works for habanero cheese?

                    Yeah ricotta is bland, so it's more desserty, imo. But, the homemade ricotta doesn't affect me like most store brands do. So, once in a while, it might be worth it.

                    The mascarpone was incredibly rich. I still have half of it in the frig. I've been using it for fruit "sandwiches"---a slice of jicama for the "bread", a layer of the mascarpone, topped with a couple slices of strawberry or kiwi. It's fussy type of food, but it makes a change and the god-children liked it (plus they made their own sandwiches!)

                      to make the hard cheese you need rennet and some critters for flavor. Cheese making shops should have the stuff you need.

                      I know salmon and famers cheese makes a great spread but I really can't think of anything I'd want to mix with this. I already make yogurt cheese and it has the good for us bacteria in it

                        I don't know about the habenero cheese boonie, sounds kinda risky.
