  • Friday night's dinner!

    YAY, I found some soft shelled crabs! I had to go to 2 stores and I had to pay $3.99 a piece for them! They are very small so I got 2 , I'm going to fry them up using a variation of the breading recipe that Barb posted under the "Fried Chicken" thread..I'm so excited.

    Since those two little buggers would never fill me up I also picked up some Tilapia, it was on sale for 3.99 lb. I am planninig to stuff it with spinach sauteed with garlic in olive oil along with pine nuts and feta cheese!

    I can't wait for dinner!

    I'm stopping by a little crab/rib shack and getting an order of steammed shrimp and the ribs (so I don't have to cook anything tomorrow!)

      Good for you Megs! That sounds yummy! I'm sure shrimp are on my menu somewhere this weekend! I have vowed to eat seafood all weekend! John is out of town and he doesn't care much for seafood so now is my chance!

        Ohhh, good for you Mog! A Seafood fest for 1! Way to go! Wish I was closer I would join you. I don't know what I am doing tonight. Kid has a ballgame, but I don't even feel like traveling to it. (Bad Mom, I know) So I may just throw burgers on the grill for hubby and I. Tomorrow I will cook.

            Oh Barb, definate pictures, that is unless I screw it up too badly! LOL! In fact I just cleared out the digital camera so I'd have plenty of room to document dinner.

            I wish you were closer too! You could bring the clams!

              I think I've settled on 1/2 cup of lettuce with 1/2 cup fresh mushrooms and 1/2 cup diced cucumber, greek vinegrette dressing with feta cheese, and a chicken leg quarter sort of braised in stock cooked with 1/2 cup of diced fresh tomatoes.....

                Linda's Chicken SPinach Strawberry Salad w/poppyseed dressing, w/spinach, strawberrys and onions all from the farmers market yesterday.

                  I made a tapas tray and took it out with my husband sat under a tree on the side of the house and ate watching the sunset ...

                  on it I made these and they were quite good if you are on the nut rung these would be fine!!!

                  coconut curried chicken balls

                  4 oz cream cheese
                  2 tbl mayo
                  1 cup cooked chicken
                  1 cup walnuts
                  1/2 tsp salt
                  1 tbl curry powder (Madras)
                  1 tbl New Mexican red chile powder
                  2 tbl minced onion
                  2 tbl minced parsley
                  1 cup unsweetened grated coconut toasted in the oven


                  Beat cheese and mayonnaise until smooth. Add all other ingredients except coconut. Shape into balls and roll in coconut chill well covered until ready to serve.... Makes about 26 balls
