  • Soft Shelled Crab and Stuffed Tilapia (pic)

This was last nights dinner! I soaked the crab in heavy cream and then breaded them using a mixture of 1/2 parmesean 1/2 almond flour, spiced with Old Bay seasoning and Black Pepper and then fryed them in Garlic Stir Fry Oil, omg they were awesome!

For the Tilapia I sauteed fresh spinach with olive oil and added slices of browned garlic, roasted pine nuts and feta cheese. I baked it in a 350 degree oven for approx 20 minutes.

I made my version of tartar sauce by mixing capers and onion powder into Mayonnaise.

I would've helped you eat those clams too Barb! We don't get many clams around here.

Now I have to decide on a seafood for this evening! So many choices, so little time! Hmm, gotta think on it for a while and decide, I don't want to have to go to the grocery store more than once today

So far I'm thinking either grilled or fried calamari with a horseradish cream sauce for dipping, but that's just an appetizer!

I am making those crab cakes. I may bread them though, Tony likes them like that. He gets double order of them at our local wing joint.

I wish you could all come over and I'd fix you up! OK, HT didn't have any calamari, I may have to go to Whole Foods to get that tomorrow, or around here, I may have to go to a bait shop! LOL Not too many folks around here think of squid as a food source! So.

Tonite I'm having some real pretty big ol' Sea Scallops, I think I'll wrap them in bacon and grill them. I also have shrimp and snow crab legs in the freezer so I may do a combo plate! I picked up an avocado and some fresh garlic bulbs too so maybe I'll get creative? At any rate, I'll be sure and take pics!

Barb, don't forget the pics ok? Oh, I didn't see any clams nor any oysters I was looking for oysters so I could do a few angels on horseback but no luck. Its ok, I"m happy w/ scallops and shrimp!

I'm back from the grocery store. We won't discuss my bill .
But they do these food presentations there. Today was Garlic Chile Shrimp and Grilled Eggplant Salad. OMG it was good. So I got all the fixings for that. Got the stuff for the crabby cakes, as Tony calls them. And loaded up on veggies. Decided against making cheese this weekend. I have cheese overload in my frig!
Now, I have no idea where to begin!!

and Thousand island dressing for Tony for the crab cakes.
And now I don't feel like cooking anything!

ROTFLMBO, I hope you at least got Mike's Lights! You know its a cardinal sin to forget the man's beer though! Shame on you!

I'm now debating on how I want to do these scallops! OMG it is so friggin hot and muggy out-- the thought of standing in front of a hot grill is not very appealing. I may have to come up with something else creative that I can do inside.
