    The shrimp and scallops look like this after being seared in garlc and oil



    ( I'll be back with the sauce photo, my computer is an antique, I can only do one thing at a time )

      Of course leave out the pasta part! I also seared the seafood and then removed it from the pan while I made the sauce, The I place the seafood in a bowl and topped it with the sauce. Unfortunatley I didn't have any good parmesean cheese around so I topped mine with feta, that might have been part of the reason it was so darned rich! It was really good, but in a small portion. However, it did reheat well, the sauce didn't seperate when I popped some in the microwave for lunch today!

          OK, I need help. Never used Chipotle peppers and what is Adobo sauce??
          I know I have had Chipotle at Chili's or something. But not sure what it is. That sure looks good Mog!

            So are you supposed to use olive oil when frying up meat for a stir fry? I did that today and it kinda turned funny, green looking.

            MOG, what kind of oil did you use to fry up those scallops?

              I use Olive Oil for stir fry's Wanna. Never had it turn green on me.
              Maybe it's a difference in the actual oil?

                Barb, you can get the chipotle peppers in adobo sauce in the ethnic section of the grocery--should be right there where you get your Sazon spice. The brand I've got is La Costena it's in a can with red label. I haven't used it yet, but I'm going to use it for this recipe...yum

                  Yep, I get them in the Mexican section at the grocery store, small can 7ounces, it says right on the can "Chipolte Peppers in Adobo Sauce."

                          You know I think I'm going to use some of the leftover Chipolte puree and mix it in with some may to make Chipolte Mayo, should be good and spicy!
