  • feta freaks!

    here is a feta tip I am not sure I have seen this previously...I love good feta ....the kind you buy in Greek or Arab delis....Bulgarian is wonderful so is the Persian feta ....I keep a huge jar of very good olive oil with fresh dried rosemary, thyme and sage ..along with dried calamata olives and a few dried hot red peppers then layer feta in it (I cut the 3 one pound blocks into thirds) there is nothing in that jar that is not wonderful given a month!!! the oil is ready when you need it all infused with the olives and herbs...the feta is well preserved and tasty and the olives are great in of their own....it is a great way to have something wonderful on hand all the time I use the oil for cooking, salads just a tip to share ...

    OMG that sounds so good. And I'm not even hungry and it made my mouth water! I love feta and I adore calamata olives!

      they are of God are they not ..and the olive oil is to die for if you have not tried it ..you must ...I think you are getting some herbs in the mail you can use those!!!!

        I use olive oil all the time, there is a very large bottle of it on my stove right now, but I have never put herbs in it, I thought you had to heat it or something to get them to infuse...Yes, I think I will try that with my herbs that are coming! Great Idea!

          no heating

          nope you do not have to heat it...just never use raw garlic infusion it can cause food poisoning!!! herbs are fine I just drop them in ....too easy for words!!!....keep in frig for longer lasting flavor!!!

            I buy feta in oil like that and blue cheese too ( I know its probably not nearly as good as your homemade though) :yes and its pretty expensive that way but a wonderful treat!

              nurselady I do the exact same thing...plus a couple of capers.

              than when I need a little salad or side dish I throw in some cut up hard salami. the feta, olives, hard salami in the flavored olive oil makes a great anti pasta type side dish! (and goes great in bagged lunches)

                oh Pammie!!

                I can not believe I do not put capers in ...just when I thought I knew the perfect mix!!!.......I have capers and a big gallon jar of olive oil feta...I will be mixing them in today!!! What a great idea...that and the idea of the blue cheese I have never done that.....you guys are awesome....feta is of God!!! I can not believe how the taste and texture just melt in to savory saltiness in your mouth!!! have you tried the bulgarian fetas...I have a friend that frequents this board that believes as I do that every feta on earth should and will be tested by us...right DT??????

                    are a wonderful idea with blue...I love this thread there is always a great tip thanks Ana..ok here is one next time you have lamb shanks try cooking them with juniper berries dried porcini mushrooms....salt whole pepper corns, one large spanish onion sliced and red wine...toss that in the crock pot and my word.....your house will be to die for smelling when everyone gets home!!!!...Lamb shanks are great aren't they we have an Asian market here in Seattle that has giant mutton shanks..I love using them but I love the taste of lamb!!!

                        Nurselady what about lamb neck slices?? I saw those at the store the other day they looked pretty good but I haven't a clue what to do with them.

                          I have not seen them either but they sound good...if the price is right I would go for it!!! let us know!...I love lamb....and can not imagine any of it being bad!
