Here is the recipe. I eat it with sun dried tomatoes and fancy olives. I am trying to find a way to create master cook file for those of you with it. I took this recipe from the internet, then re-invented it. I used the original recipe as a loose guideline, then I added it my mastercook 8. It has 4 net carbs per serving, 2 fiber grams.
Greek Spinach Quiche low carb

10 ounces frozen spinach -- chopped
1 cup cream
8 ounces feta cheese -- crumbled
5 whole eggs -- whipped
1/4 cup butter -- melted
1/4 cup Romano cheese -- grated
1/4 cup parmesan cheese -- grated
1/4 teaspoon pepper
1/2 teaspoon salt
2 teaspoons nutmeg
1 cup Portobello mushrooms -- chopped
3 tablespoons red onion slices -- sliced 1/8-inch thick
2 tablespoons sun-dried tomatoes, oil-packed
preheat oven to 350 degrees
Cook the spinach according to package directions; drain well (pat water out with paper towels). saute mushrooms in butter.(don't use the 1/4 melted butter listed in ingredients. That butter goes in the bowl with the rest of the ingredients).
Combine the spinach, mushrooms, and all the remaining ingredients (except red onions and a little romano/parm cheese) in a mixing bowl, or food processer (I use).
pour it in a butted pie pan (glass preferred).
sprinkle top with shredded romano and parmesan cheese, followed by sliced red onions.
I sometimes save a few nice sliced mushrooms and decorate the top a little.
Bake at 350 degrees for 35 minutes or until a knife inserted in the
center comes out clean. Let stand 10 minutes before serving.
Serving ideas: This is great with some sun dried tomatoes and olives. I like it better after it has been refridgerated. Tastes great cold!

It sounds hard to make...but it's not....it's easy. especially with a food processer.
