    I am re-posting it here!

    Here is the recipe. I eat it with sun dried tomatoes and fancy olives. I am trying to find a way to create master cook file for those of you with it. I took this recipe from the internet, then re-invented it. I used the original recipe as a loose guideline, then I added it my mastercook 8. It has 4 net carbs per serving, 2 fiber grams.


    Greek Spinach Quiche low carb

    10 ounces frozen spinach -- chopped
    1 cup cream
    8 ounces feta cheese -- crumbled
    5 whole eggs -- whipped
    1/4 cup butter -- melted
    1/4 cup Romano cheese -- grated
    1/4 cup parmesan cheese -- grated
    1/4 teaspoon pepper
    1/2 teaspoon salt
    2 teaspoons nutmeg
    1 cup Portobello mushrooms -- chopped
    3 tablespoons red onion slices -- sliced 1/8-inch thick
    2 tablespoons sun-dried tomatoes, oil-packed




    preheat oven to 350 degrees


    Cook the spinach according to package directions; drain well (pat water out with paper towels). saute mushrooms in butter.(don't use the 1/4 melted butter listed in ingredients. That butter goes in the bowl with the rest of the ingredients).


    Combine the spinach, mushrooms, and all the remaining ingredients (except red onions and a little romano/parm cheese) in a mixing bowl, or food processer (I use).
    pour it in a butted pie pan (glass preferred).
    sprinkle top with shredded romano and parmesan cheese, followed by sliced red onions.
    I sometimes save a few nice sliced mushrooms and decorate the top a little.




    Bake at 350 degrees for 35 minutes or until a knife inserted in the
    center comes out clean. Let stand 10 minutes before serving.

    Serving ideas: This is great with some sun dried tomatoes and olives. I like it better after it has been refridgerated. Tastes great cold!

    It sounds hard to make...but it's not....it's easy. especially with a food processer.

      AAAWWWWW....thank you! I've made it about 10 times. It Gets easier everytime! My husband, is a "sometimes" low carber, he really likes it and does not even realize that it's low carb! I forget to add that I eat it with some sliced raw red onions, along with the sundried tomatoes.


      I'm allergic to sugar...it causes me to break out in fat!!!

          I made a little correction in the recipe. Where it says to "saute the mushrooms in butter", I added (don't use the 1/4 melted butter listed in ingredients. That butter goes in the bowl with the rest of the ingredients). The recipe needs that butter!


          I'm allergic to sugar...it causes me to break out in fat!!!

            Looks yummy to me. I may try it w/o the onions, I'm not much of an onion fan unless they're cooked really really well, nice and soft and squishy!
