    I was asked to post this over here, I originally posted it at our sister board and there is a long thread there with lots of pictures of other folks versions it you're interested take a look here http://www.lowcarbbulletinboard.com/...hread.php?t=65

    These are Super easy and delicious!

    Take a jalepeno pepper, (be sure to wear gloves while handling peppers!) make a slit down the pepper the long way, scrape out the seeds( leave some seeds if you like it hot, I take out the white membrane and then stuff the seeds back in cause we like 'em hot!).

    Stuff the pepper with a peeled and deveined shrimp or a chunk of non melting cheese such as Queso Blanco or Fontina, Wrap in a strip of bacon, secure with a toothpick or skewer and grill! Voila!

    If you make a batch, please take a pic and post it here! Everyone makes them their own by using different fillings. We've tried them with cheddar and with a mixture of cheddar and cream cheese too! The cheeses that melt are a little harder to deal with cause they tend to run out all over the grill, we've found it easier to put tin foil under them if we make them with a melty cheese to keep the mess out of the grill.

          These are my favorite.

          I can't wait to make these again. I've used mozzarella, and queso blanco. Both were great.

                Our jalepenos in our garden are getting to just about the perfect size to make some of these over the holiday! YAY! You gotta have firecrackers for the 4th of July!
