                  Here is the recipe, my changes are in red. This was very good (and almost gone! How many servings is it supposed to be? Cuz it looks like it feeds 4 in this house LOL) The sauce did thicken as the dish sat.

                  Shrimp Florentine

                  4 (10 ounce) packages frozen chopped spinach (I used a 20 ounce bag of fresh) (Barb did too)
                  3 pounds medium-size shrimp, cooked, shelled and de-veined ( I used 1 lb) (Barb used 1.5 lbs)
                  1/4 cup butter (I used a couple of tablespoons maybe) (2 Tablespoons)
                  1 cup flour (I used some parmesean cheese, I didn't measure) (1 cup almond flour and I threw in some parm/romano)
                  3 cups skim or regular milk ( I used 1 pint of heavy cream) (1.5 cup - half of which was heavy cream and half was water)
                  1 cup dry white wine ( I just dumped some in...and then took a swig ) (me too, about a cups worth)
                  1/2 cup chopped scallions ( I used garlic which I sauteed ) (I sauteed garlic with the spinach then threw in some green onions when I prepared the sauce)
                  Salt and pepper, to taste
                  Paprika ( I couldn't find mine so I omitted it) (I had some and used it)
                  2 cups grated Cheddar cheese ( I used enough to cover the top nicely) (I kept this measurement at the 2 cups! )
                  I also used 1/2 teaspoon Xanthan gum added to the sauce to thicken a little more

                  Preheat oven to 350 degrees F.

                  Thaw and drain spinach well.

                  Spread spinach in 13 x 9-inch ovenproof dish and top with shrimp.

                  In saucepan, melt butter and stir in flour, gradually adding milk, wine and scallions.

                  Cook, stirring constantly, over low heat, until sauce bubbles and thickens.

                  Add salt and pepper to taste, and enough paprika for rosy color. Pour sauce over shrimp, and sprinkle with cheese. Bake uncovered for 35 minutes, or until bubbly.

                  Serve with steamed rice.

                    Looks great Barb! So, was it good? I'm wondering about the almond flour? When use it for breading it has a texture more like corn meal...did that make the sauce kind crunchy? I wish I could taste it! It sure looks yummy!

                      Yeah, it was awesome! No it was not crunchy at all. The lumps you might see in there are the green onions. The sauce was very smooth and creamy.
                      I was thinking if anyone wanted a quicker easier way to just use some alfredo sauce. They have some good alfredo in jars now! And that would make it induction friendly!

                        I did wish I had thought to pick up a spaghetti squash to go with it! Oh well. Next time. The guys had theirs over rice.

                          You know I'm not big on spaghetti squash in place of pasta. I only like it with garlic and butter or olive oil and sometimes parmesean cheese. I love the squash, I just don't like the squash flavor with sauces, they just don't taste right together to me.
