  • Poached Salmon & Greens with Dill Dressing

    Found this recipe, thought it looked and sounded good (even though I dont much care for Salmon I thought I'd give this a try)....decided to share.

    Makes 4 Servings
    1/4 cup Breakstone's or Knudsen Sour Cream
    1 Tbsp. Grey Poupon Dijon Mustard
    1 Tbsp. fresh lemon juice
    2 Tbsp. vegetable oil
    1 Tbsp. chopped fresh dill
    1 bag (10oz) mixed salad greens (about 8 cups)
    1 salmon fillet (14oz), poached, flaked

    Combine sour cream, mustard and lemon juice in a small bowl. Gradually add oil, stirring until well blended. Stir in dill; cover.
    Refrigerate at least 1 hour before serving.
    Arrange salad greens on serving platter; top with salmon. Serve with the sour cream dressing.

    Oh that dill sauce sounds really good! And I just happen to have some fresh in the garden!

      It does sound yummy......like I said, I'm not a fan of salmon....but the combinations of flavor in this salad just peaked my taste buds.....

        I love salmon! But I think I would prefer the salmon to be grilled and then use that sauce from your recipe on it! I'm going to have to try this, Salmon is on sale here for 2.99 a lb! So that was good timing!

          Its 7.99 here and THATS a great price for it here. I love salmon too and that salad sounds delicious!

                $2.99 a pound?

                Oh LIFE is not FAIR! I can scare some up for $4.99 a pound usually, but then i have to buy 3 pounds minimum at a time. Curse you, bulk stores!

                Dill? Mmm... I've got to get some fresh dill and try this. I've been experimenting with a fennel cream sauce... aren't herbs and spices delightful? I'm becoming an addict. Hooked on herb(s).
                No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                    I'm more of a spice user than an herb user...BUT...I'm slowly coming around to the wonderfulness of herb usage....

                      LOL, come on girls! Yep 2.99 and that's at Kroger, not a bulk store! Harris Teeter has Snow Crab legs on sale for 2.99 as well this week! I picked up 12 pounds yesterday and stocked my freezer! We're having some of those buggers tonite.

                      When they put salmon on sale for 2.99 I usually buy about 6 filets and get John to smoke them for me! Then I seal them up with my FoodSaver and put them in the freezer for later. Man I love smoked salmon, and I have a recipe for the most awesome Salmon Caper dip/spread...o.k., now I"m hungry!

                      I'll be looking for that ADBB sign! Bring some extra rocking chairs!
