  • Advice needed--Hard-Boiled Eggs

    Good morning :wave

    I have a problem with hard-boiled eggs.

    When I try and peel them, they wind up looking awful and not appetizing a little bit. The shell comes off in bits and chunks. The eggs look like they have been banged around with a baseball bat! :anger

    Hope it was okay to post this question on this thread.

    How long are you boiling the eggs for? Are you over cooking them?

      I usually roll them, and the shell just falls off. There is something called the Eggstractor that looks pretty cool, but I have never tried it.

        hard boiled eggs

        Here's how I do it:

        Place eggs in pot of salted water and bring to a boil. Cook at low boil
        for about twenty minutes. Drain and fill pot with cold water and ice.
        Let sit a while, then dry and hope to be able to peel.

          Isn't 20 minutes a little too long to be cooking them for. I was always under the impression that you only need to boil them for 10 minutes. Thats what I do with mine and generally dont have any problems peeling them.

            Here is a good thread for you to read it has lots of good info on cooking eggs. The week old egg thing is the the key. They peel much better than fresh eggs.

              The best way to cook them is to put them in the pot of water and bring it to a boil, put a cover on the pot and turn off the heat, leave them sit for 20 minutes then drain the water and run cold water over them. Roll them on the counter using the palm of your hand and pressing down just hard enough to crack the shell but not squash them--the shells should come off very easily--the membrane around the egg will hold all the little pieces of shell together just like when a windshield made from saftey glass breaks -and it will easily come off in one "sheet".

                Boil for 22 minutes then plunge in ice water or just run cold water over them until cool. Gently crack and peel a perfect egg!

                    Lana is correct, fresh aggs are harder to peel :nod

                    I haven't yet tried the rolling method, but I am sure gonna try it.

                      I didn't doubt it, but I had never tried it either. I was hoping someone would respond with OMG that is soo good or utter crap.

                        Hey Mother, I'm with you. I only boil for 1 minutes and let sit for awhile. Can't imagine 20 min. If anybody ever sees green around the yolk you have overcooked them.

                          The local news here does a weekly "Does it work?" story and when they tried it, well out of about 2 dozen eggs I don't remember one working correctly. Most of the time it just smashed the eggs--shell and all.

                            Crack the egg on the counter and roll around to crack all around. Peel egg under cold running water. Works for me everytime!

                              I also use a teaspoon and run it under the shell and it peels nicely as I run cold water over the egg I am peeling. I hope I made this suggestion clear. It works for me.
