      Me too ToC!

I like to make a really good dip out of the smoked salmon, its always a hit when I bring it to parties. Just flake the salmon and mix it with softened cream cheese, a dollop of sour cream and a bunch of capers with a little caper juice. Mix it all together and chill! There is never any left.

I like mine a little drier so we usually smoke them around 2 hours.

I'm with you, I'll eat a slab of the stuff too! But I do like the spread as well!

MoG, I found a recipe for hot smoking and made a smoked piece of Keta yesterday. Im goign to smoke it for longer next time as it was a lil too moist for me. What do you serve your dip with? Im going to take some to my office and share my experiment. I was thinking celery and bread pieces (for the noncarbwatchers). What else would you suggest?

I've made myself flax crackers to spread it on before ToC, it was really good! Hey why don't you make those almond flour crackers?

oh man those look good. I think I might have aportion control issue, not to mention its toohot for the oven, so Im going to wait to make crackers. Im slightly embarassed to say that I could (and would) polish off a box of wheatthins pre-atkins. Id prolly feel sick before I got that far now but Im not going to tempt myself. Maybe when I get farther down the road. I dont like celery much so I know I wont inhale the dip or the celery like a porker! lol
