  • Scalloped Cauliflower

    Here is the recipe I said I thought would go good with the Easy Parmesan Meatballs......

    2 bags frozen cauliflower
    1/2 small white onion, finally chopped
    12 oz bag finely shredded cheddar cheese (sharp if you like)
    1/2 pint whipping cream
    salt and white pepper (i used black)
    1/4 cup butter (1/2 stick)
    crumbled cooked bacon (optional - i did not use)

    Preheat oven to 350 degrees F. Open frozen cauliflower bags one at a time into a collander and run cool water over each to separate the pieces and slightly thaw, but dont use warm water.
    Spray large casserole dish with cooking spray or butter it well. Layer 1/2 of cauliflower across bottom of dish, season with salt and pepper, then layer with bits of onion, thinly sliced "pats" of butter and 1/2 of cheddar cheese.
    Repeat.
    Pour cream over top and place dish in oven. If dish is very full, put cookie sheet under it to prevent bubble over in oven.
    Bake 45 minutes. 10 minutes before completion add crumbled bacon if you opt to. Bubbly and delicious - this will cure your craving for scalloped potatoes.

    Makes 10 servings. 4 net grams of carbs per serving.

    *** Just a note - I made this and it was very yummy...BUT...it doesn't reheat well the next day...the cream, butter and cheese tend to seperate. This is definately a dish that is best if eating when cooked. ***

    ohthat sounds very YUMMY. Ive been wanting some scalloped potatoes and this sounds like it would fit the bill perfectly!

      Yep, give em a try...they are really good (at least to me they were)...very creamy and rich....I actually thought I was cheating...LOL.

        I have a very similar recipe and it does taste like scalloped potatoes. I made my recipe at Christmas and family members loved it. Then I told them it was cauliflower and got, "No it wasn't...you're joking, right?...that's the best cauliflower I've ever tasted."

        Give it a try....you'll love it if you miss scalloped potatoes.

          Ohhhh Thanks for this Seshena!!
          Question, How many servings does this make? Since it doesn't reheat well and there are only 3 of us, would 1/2ing the recipe be a good idea?
          OK, I just looked back and saw 10 servings. Yeah, probably 1/2 for what's left of my family would be a good idea!
