  • Spinach Pancakes

    Found this recipe, it looks good, thought I'd have it tomorrow night for dinner.

    Makes 4 servings, 2 pancakes each

    8 eggs, lightly beaten
    1 pkg (10 oz) frozen chopped spinach, thawed, well drained
    1 small onion, chopped
    2 TBSP vegetable oil
    1 pkg (4 oz) Traditional Crumbled Feta Cheese
    1/2 cup Sour Cream

    Mix eggs, spinach and onion until well blended. Heat oil in large non stick skillet on medium high heat. For each pancake, pour 1/4 cup of the egg mixture into skillet; sprinkle with about 1 TBSP of the cheese. Cook 2 min or until golden brown. Turn panckakes; cook until other side is golden brown.
    Serve topped with sour cream.

    Oh yummm spinach!!
    Let me know what you think of this recipe when you make it!! I don't know how well spinach pancakes with sour cream would go over in the household. But it sounds good to me!

        well I havent made it yet cuz its not dinner time yet but if you want to see what it looks like just go to www.kraftfoods.com and type it in under the recipe search, there's a pic of it there....it sort of looks like a crepe to me with just the dollup of sour cream on top....*shrug*

            that website is actually where I have found most of my latest low carb recipes at...the parmesan meatballs, the salmon salad, etc.........
