  • Gorgonzola Sauce

Another from Stella's Living Low Carb. Made this over the weekend and had it with our Porterhouse's. OMG. This is a keeper!

    2/3 cup sour cream
    1/3 cup mayonnaise
    4 ounces Gorgonzola cheese, crumbled
    1 1/2 teaspoons Worcesthershire Sauce

Combine ingredients in a saucepan. Cook overlow heat for just a couple minutes, then serve warm over the steak, or even chicken! Yummmmmm...

Is that induction friendly? I mean as far as the gorganzola goes......not sure if that is an acceptable cheese or a cheese for the dairy rung....

          Re: Gorgonzola Sauce

I think its ok for induction, I believe it is an aged cheese, here's some trivia

          GORGONZOLA CHEESE

Gorgonzola is an Italian cows' milk (and sometimes goats' milk) cheese named after a village that was once outside of Milan, but is now really a suburb of the city. The cheese dates back to the 9th century, with the blue/green mold (more green than blue) developing accidentally sometime around the 11th century. Before then it was similar to a cheese called Panerone made in Lombardy. It is considered one of the best in the world of its kind. The London Stock Exchange is nicknamed 'Gorgonzola Hall' due to the greenish marble used in its interior.

As with most blue-veined cheeses, Gorgonzola was originally aged in caves and the blue veins of mold developed from spores naturally present in the caves. Today, again like most blue-veined cheeses, the mold spores are mixed right in with the curds in the cheesemaking process to maintain consistent standards.

I'm testing my memory here (induction was a long time ago) but I believe its in the "others" category for induction. I'm sure someone will correct me if I'm mistaken.

Yes Gorgonzola is a "bleu cheese", induction OK
And sour cream is listed under Salad garnishes as well as special category foods. (1oz).

cool...didnt realize it was a "bleu cheese".....and yes, sour cream is fine for induction......in moderation........

although......ill admit...id rather you had just said it was of the "bleu cheese" variety instead of that tidbit about it being a "moldy cheese"...LOL
