    Let's make a list of the easiest and yummiest lunches to pack for work. Salads, wraps, etc... all fit. I'd like to get a good resource for when school returns. My fav's are taco meat with cheese, jalapeƱos, sour cream and shredded lettuce all layered together or pizza toppings thrown into a boal and microwaved.

    Lemme see...Salad is always easy, I like to have spring mix, red or yellow bell pepper, red onion, cucumber, olives, cheese, meat. As for wraps, I love making "sandwiches" or wraps with lettuce leaves. Anything you'd put between bread can be put between lettuce leaves. Cuban Sandwich: ham, salami, sliced pork, swiss cheese, tomato, mayo, mustard and dill pickle. Italian Grinders. Hamburgers! Seafood salad, yum! Get creative. You can pack it all separate and put it together when you're ready to eat. Leftovers are always great packed for lunch too.

      Leftovers are my best bet for lunch. Or salads.

        Heidi turned me onto stuffing half a raw bell pepper. It's good with salmon, cream cheese and dill, chicken salad with mayo, onion and celery, ground beef, salsa, sour cream and cheese, and the list goes on and on.

            Leftovers just about everyday! I just always plan to cook more than we can eat when I make dinner the night before. I love it!

              I buy those rotisserie chickens at the supermarket. I think they're a great deal since they don't cost much more than an uncooked chicken (true here - maybe not there). I like to pull of small pieces and heat in the microwave with butter and Frank's hot sauce.

                Leftovers here too!

                During cooler weather, I sometimes bring soup. Actually, even in hotter weather like this I bring soup---chilled soup!

                  yum! Hadn't thought about doing that to the store-bought chicken, but we do it with the wings so I know it's delicious. Thanks!

                    Leftover hot-dish or casserole type stuff. All my recipes make 4-8 or more even servings, and I'm the only one who will eat them.

                    But at this time of year, it's just as likely to be one cooked chicken breast and whatever the farmer's market has that day!!! Love the harvest season!
                    What is it, a RACE? It's coming off, right????
