  • Pumpkin smoothie (induction friendly!)

    here you go for the spirit of the season ...

    and they say you can not have a smoothie on Atkins...enjoy this is really really good!!!....

    for 2 large servings toss into the blender

    1 cup cooked pumpkin puree (I roast pumpkin chunks with a little butter and kosher salt in a heavy duty covered pan in the oven until very soft) to make it easy use canned pumpkin it is great as well!
    1/2 cup heavy cream (use less if you want to)
    cinnamon, nutmeg and ginger to taste (or any combo of pumpkin spices you like)
    1 tsp vanilla (check label)
    2 tsp maple extract (check label)
    splenda to taste (I actually leave it out as I do not use the stuff)
    2 cups ice and just enough water to get it going in the blender I am thinking it takes about a cup)
    blend well and enjoy!!!! you can make this festive with a dollop of whipping cream sprinkle of cinnamon

    you can toss a fresh raw egg in and call it breakfast!!
