    I'm looking up the carb counts for celeriac (celery root). Anyhow, according to the USDA 1 cup raw (156 grams) is 14.2 total carbs, 2.8 fiber grams. 1 cup boiled (155 grams) is 9 total carbs, 1.9 fiber gram. ensive

    Although I often find the USDA numbers to be off the mark, I think in this instance they might be correct.

    The difference between the boiled and raw could be water weight. I'm sure it absorbs water when you boil it - hence the lower numbers.

      yep the same thing happens with any legume raw cup verses boiled cup.

        I doubled checked it with Netzer. She doesn't list a cooked value only raw. 1/2 cup raw is 7.2 total carbs, 1.4 fiber which jives with the USDA's count.
