  • Why didn't I do this before!

    OMG, MOG I have just eaten that salmon dish and its lovely. I cant believe I havent cooked fish before. Its a nice surprise and I will be having it again.

    On top of that, Heidi will be so proud of me

    I have since re-gained a bit of weight, but that is soon to be coming off again!

      OK, Rich, is this a little more exciting?

      Kate's Secret Silver Salmon Sauce
      • Rinse your Salmon fillet or steak in cold water then pat dry. Place fillet on a large piece of tinfoil and cover with secret sauce. To make the secret sauce combine the following ingredients:
      3/4 C. Mayonnaise (or half sour cream or half yogurt)
      1/2 Tblsp. Dijon Mustard
      1/2 Tsp. Dill Weed (More if you have fresh dill)
      1/8 Tsp. Course Ground Pepper
      Pinch of Curry Powder
      Pinch of Cumin
      1/2 Oz. White Wine
      1/4 Tsp. Thyme
      1/8 Tsp. Paprika (Optional)
      1/4 Tsp. Lemon Pepper
      1/2 Tblsp. Soy Sauce
      1 Clove Garlic, Finely Diced
      1/2 Onion, Diced
      Juice of 1/2 Fresh Lemon
      • Spread a thick layer on the fish, seal it up and bake in a preheated oven at 350°, or throw on the grill or cook over the campfire. Cook for 20 to 30 minutes for a coho (silver) fillet. The rule of thumb is cook 10 minutes per inch of thickness, measured at the thickest part of the fillet or steak. When done, the fish should flake easily when prodded with fork.
      A nice mixed green salad is the perfect compliment for this nutritious, delicious meal.

        Yay! I'm glad you liked it! Fish/Seafood is so easy to cook and so fast too! I love it!

            All except for the Lemon Pepper. (i had to go and buy the White wine, (a small bottle for £1.50, some Dill, some sour cream and the soy sauce. the rest of it I had.

            And I dont think we get lemon pepper over here.

              I am easily intimidated by recipes with lots of ingredients.

                      I can be intimidated by lots of ingredients as well, unless a lot of the ingredients are just spices like this one. I have all these ingredients on hand except for the lemon pepper and the salmon. I have a whole cabinet plus a spice rack of spices. Oh and several more fresh in the garden!

                        Now that I actually read the recipe, I have everything but the wine, lemon pepper and salmon. I have tons of spices.

                              You know how I love kitchen gadgets Miss P. I went out this weekend and bought one of those mini choppers for dicing stuff. Man o' man, that was like the best 15 bucks I've spent in a long time! I took almost 2 hours off of the time it takes me to can a batch of salsa! I love it!
