  • Poached chicken

    Well, I tried a recipe that I never thought would work. I usually grill a batch of chicken breasts, but not anymore. This method is superduper easy and requires very little of my time watching the food cook. And I get two food products: poached chicken and a chicken broth!

    Poached Chicken Breasts

    2 pounds boneless, skinless chicken breasts
    water
    1 rib celery sliced into quarters
    1 small onion sliced in half
    salt and pepper to taste

    Put the chicken in a large pot. Add the vegetables, salt and pepper. Add enough water to completely cover the chicken.

    Bring to a rolling boil. Simmer about 5 minutes. Cover. Remove from heat and allow to stand without lifting the lid for about 25-30 minutes.

    Strain the liquid and reserve for use as stock.

    I'm using one of the breasts tonight for a hot chicken salad stuffed zucchini.

    I love poaching chicken too!

    I poach chicken in 1 part beer 2 parts water and then shred it and mix with homemade bbq sauce. Good in between revolution rolls!

      I like to buy the frozen bags of boneless skinless when they're on sale, then I poach 3 or 4 of them at once and keep them in the fridge. I'll chop one up and add celery, mayo, green onion and chipotle sauce for a chipotle chicken salad. Or slice and add to a caesar or stir fry.

          This is funny, I just poached some right before I sat down and saw this thread. I made chicken salad with green onions, black olives, mayo, a little pepper and salt.

              I posted it in the main forum a while ago...

              Melinda's BBQ Sauce or Ketchup replacement

              1 15 oz can tomato sauce
              4 tbsp Worcesteshire Sauce
              1/2 tsp liquid smoke
              3 tsp Frank's Red Hot hot sauce
              1 tsp chili powder
              1 tsp ground mustard seed
              1/2 tsp paprika
              6 pkts Splenda
              1/2 tsp cumin
              2 tsp onion powder
              2 tsp fresh chopped garlic
              2 tsp beef base or bouillion
              2 tbsp + 2 tsp white vinegar

              Mx it all together and bring to a simmer.
              Turn off and let cool. Pack it in the fridge for atleast 6 hours.
              Use liberally, well, atleast that's what I do!! It keeps for a few weeks in a closed container in the fridge. Well, it only keeps in my house about 2 weeks and then I have to make more.


              Feel free to mess around with the ingredients and see what you come up with. It definitely tastes better after it has cooled and then been reheated. Shred your chicken and add BBQ sauce and cheddar and bacon. Make a snadwich or a low carb wrap. It's awesome!!

                Jellied chicken salad isn't bad at all! I finely minced the chicken and the veg. So yeah, it looks similar to bologna, but I know it doesn't have alot of nasty fillers.

                Next time, I'm going to add more spice, like crushed red pepper flakes to it. But all in all, it's not bad!

                    mmm that sauce sounds nice!!

                    Being in the UK , does anyone have any suggestions of what I can use inplace of liquid smoke and franks hot sauce?

                      Franks sauce is a pepper sauce so you'll have to find a brand you have there. Liquid smoke is a brand name for smoke flavoring, again you'd have to look for a local brand, I'm sure you guys must have those things there.

                          A great way to do chicken or any separate cuts of meat if they're frozen too. Cooks them evenly and relatively quickly and keeps moist.
                          What is it, a RACE? It's coming off, right????

                            Angelstar, Tabasco is much hotter than Frank's sauce is, but if you like it, sure you could use that.

                            Megs, I poach whole chickens!

                            I take a large pot and boil the water with chopped onion, celery and salt. Once the water comes to a full boil I plunge the whole chicken in, when the water stops boiling I pull the chicken back out (this seals the juices in under the skin) and bring the water back to a rolling boil, put the chicken back in, put the lid on, and turn the heat off. Let it set for approxamatley 45 minutes. When its done you take the chicken out and debone it, it is super easy to debone and very moist and tender. I make huge batches of chicken dumplings that I take to neighborhood get togethers, I need 4 chickens for a batch and this is the way I always prepare them.
