    So I made this creation yesterday out of Jimica turned out very good. I was doing it as a special thanks to DH. He was very sweet yesterday and emailed my lyrics to a love song to start my day yesterday. I thought I'd do something special and give him a treat. It turned out so good my DH asked me to make one to bring to the office. No pressure there...making something people wince at the thought of and having it look appetizing enough to eat. Anyway, I made it and he carried it off this morning. Hopefully nobody will have some horrid reaction and ban me from sending in baked goods. It's odd to send something in to somewhere to be nice and feel like I'm imposing. Oh well, they are all grown ups.

    Recipe

    1 Jicama sliced or cubed (sliced softens better)
    2 sccoops-Carborite Baking mix (although ingredients are Soy Protein and Sucrolose so I'm sure you could substitute)
    2tsp water
    1/4 flax meal
    1/4 shortening
    2Tsp Butter (melted)
    To taste: Cinamon, Sweetener (I used stevia), and Sugar Free Syrup

    Deep fry Jicama slices until golden
    Mix bake mix, flax, shortening together for crust
    Toss fried slices with the melted butter, cinamon, sweetener and syrup. Place some of the crust mixture in baking dish, cover with jimica slices and top with additional crust
    Bake until crust is brown and crispy

      His office enjoyed it apparently. Funny too cause this afternoon I went to use the microwave and found the butter in there melted in a dish. I forgot to add it. LOL. Oh well they enjoyed it anyway.

        That sounds delicious! I wish I could find Jicama here, but I haven't seen it yet! I will have to check out the commissary next time I go! :yes

          I've done something like this. Add some cheddar cheese and melt it on top and you have something like the one on a box of Ritz. People seemed to like it.
