hello. i was wondering if anyone had any recipies for artichoke that are induction or carb friendly thanks, plus ive never had it or cooked it any tips? thanks oh or even eggplant?

The way my husband and I like it best is pressure cooked. I cook it for 40-45 minutes, depends on the size and number you're fixing. When they're done we peal the leaves off and dip the end in mayo. Yum!Started 5/11/04

We just steam them (after prepping by cutting off the tips of the leaves) and then dip them in a mixture of dijon mustard and melted butter.

The points on the leaves have a little thorn on the end---so cut them off for safety sake.
I noticed you asked about eggplant. Not all the recipes are low carb friendly, so you'll have to watch it.
