  • Fried Chicken!

    Kent started me with his greasy food thread!! EVERYONE loves fried chicken don't they? ...

    my husband loves when I make this one ..it is simple really no breading but crispy golden and very tasty!!!

    take a big bowl of water cut up a chicken (or use any pieces you like that have skin on them) ..and drop it in ...mix in 1 cup sour orange juice (lemon or lime juice is fine) and 1 cup of kosher salt...let the chicken soak for 30 min then drain and dry the pieces ...leave them at room temp while your oil is heating (I use a pot of oil on the stove but a deep fryer would be great for this)
    just deep fry the pieces until they are golden brown and crispy about 12 min or so drain on a rack with paper towels underneath squeeze the juice of one lemon over the chicken while it is hot and sprinkle with chile mixed with salt half and half and enjoy

    second is coconut fried chicken with boneless chicken sliced into tenders
    put the pieces in mix of egg, 1 tbl soy sauce juice of a lime beaten together...

    make the breading out of

    1 cup of shredded dried unsweetened coconut
    1 tbl chile powder
    1 tsp cumin
    salt and pepper to taste

    toss the pieces of chicken in this breading lightly then put on a rack to dry while you heat your oil ...deep fry pieces until golden brown and crispy


    number 3 then I will stop!!!

    sesame fried chicken

    boneless chicken strips again
    soak in mix of egg, 3 Tble of soy sauce, 1 tble sesame oil

    mix together
    1/2 cup ground up toasted sesame seeds (I toss them in the coffee grinder for just a few min
    1/2 cup soy flour
    1 tbl chile, 1/4 tsp of ginger, 1/2 tsp garlic powder, 1/2 tsp of onion powder ..if you have some five spice put 1/2 tsp of that in too!

    toss in breading and again while oil is heating put on rack to dry

    deep fry until golden ...enjoy

    your turn I know there are many Low carb fried chicken methods out there!!!

    I like the easy breading of 1 part almond flour to 1 part parmesan cheese, seasonings to taste.

    Dip your chicken in egg, dip in the breading and fry in oil.

    This was wonderful.

      you know I have yet to try this one but maybe tonight I have the stuff do you put any oregano or other herbs in it or just the almonds and parm?

        Yeah, i added italian seasonings--oregano and basil, I also added some garlic and onion powder. Whatever spices float your boat. It makes a really good breading. I tried the parmesan by itself and wasn't that impressed. But the almond flour along with the parm and the spices made a great breading.

          I do mine like Joy. I add whatever spices I'm in the mood for. We like poultry seasoning, sage, garlic powder, paprika, old bay and lots of black pepper. But it really varies depending on what I grab off the rack. This is a really good breading!

            do you use boneless pieces or whole pieces with the skin for the parm almond one? I am going to make this tonight for sure I have a nice piece of parm waiting to be grated in there

              I have been tweaking my breading mixture lately, but it's pretty close to the "Original Recipe" flavor if you know what I mean.

              You have to start with good chicken since it's the chicken that will make or break a meal. Cut it up, and sprinkle salt and pepper over the pieces. I find it's best to do this directly to the chicken rather than make my breading too salty to achieve the same affect.

              Breading:
              1 cup Carbquick (You could use 1 cup Kraft Parmesan cheese or substitute a little soy flour for a portion of cup. Soy Flour will produce a much darker breading as it burns at a lower temp)
              1.5 TBS Salt
              1 TBS Paprika (can never have too much Paprika)
              1 TBS Ground Black Pepper
              2 TSP Poutry Seasoning
              1 Tsp garlic powder
              1 tsp cayenne pepper

              I normally put my breading in a air tight container and check it in there.

              Egg Wash mixture:
              1 or 2 Eggs (depending on amount of chicken)
              .5 cup of Heavy Cream
              Enough Water to thin mixture

              My method is to double bread the chicken, i.e. bread-egg/cream-bread. After you finish breading it, put the chicken in the fridge for at least a half hour -- otherwise your breading might leave the chicken -- while you clean the countertops.

              Fry for 17 minutes (or until done) @ 375 degrees.

                AWESOME thanks how about some coleslaw with that fried chicken


                grate a head of cabbage
                jullianne a couple of red bell peppers
                mix together 1 cup mayo, 1/4 cup cider vinegar salt pepper and a couple of packets of splenda to taste and voila!!!

                    Angel try the first one I rec make a brine soak your chicken dry it deep fry it ..it is crispy and very good!!!!

                      Angel, use parmesan cheese alone. Beat an egg, dump chicken in, dump chicken into grated parm. drop in oil. You can also add flaxmeal to your parm mixture.

                        Or you can just use parmesean and omit the almond flour. That's how I always did it until Barb turned me on the almond/parm mix!

                          or porkrinds I guess .....although I find them not really edible most people like them and you can crush them and use them for breading ..but I still see that nipple ...blech...

                              Ok I tried the chicken with the almonds and parm ..I liked it ok ...but my husband really loved it ...so we have a winner personally I love the coconut and he just likes it ok ..so we have choices!!!
