  • Dinner tonight?

    ho hum another boring day of food in Atkinsland ....

    it is only 6am but I am thinking almond parm fried chicken, coleslaw, plantains and something with blackberries!!!! I am going to turn purple here soon I have eaten so many this week!!!

    I will probably just have something boring like a fillet steak or something. I don't know yet.

    Maybe some more salmon or some mackerell. I am not fully decided yet. I may even get some chicken breasts and cook them up.

    I have since re-gained a bit of weight, but that is soon to be coming off again!

      I'm making this recipe only I'm using pork loin chops instead of lamb, I don't eat lamb

        I do a similar one for pork with fennel seeds it is to die for ...I love lamb

          Now that Rich brought up Salmon, I think I'll have that for dinner. Broiled with dill, olive oil, lemon and sea salt. Asparagus on the side. Maybe I'll make hollandaise sauce? Wow, dinner sounds awesome, doesn't it?

            I love lamb too. It's hard to find good lamb in these parts. It's actually hard to find good anything. I have to go to Whole Foods to get fish, because everything everywhere else is previously frozen.

              Im craving breakfast. So it will likely be breakfast for dinner. Omelet with sausage, bacon, onions, mushrooms. YUM

                  I'm having minced beef with taco seasoning and green beans 2night

                  Last night I had slices of roast beef and beans, brocoli + cauliflower in a homemade cheese sauce and i sprinkled cheese on top and stuck it under the grill to make it abit crispy on top. IT WAS LUSH!!! I'm well chuffed it was nice

                    I'm having this with some grilled chicken. Instead of the pepper jack I used Monterey jack cheese this time.





                    CHILE RELLENO CASSEROLE
                    2 7-ounce cans whole green chiles, drained well *
                    8 ounces pepper-jack cheese, shredded
                    3 eggs
                    3/4 cup heavy cream
                    1/2 teaspoon salt
                    4 ounces cheddar cheese, shredded

                    Grease an 8x8" baking pan. Slice each chile along one long side and open flat. Arrange half the chiles in the bottom of the baking pan, skin side down, in a single layer. Top with pepper-jack cheese. Arrange the remaining chiles over the cheese, skin side up. Beat eggs, cream and salt well. Pour evenly over chiles. Top with cheddar cheese. Bake at 350º for 35 minutes, until golden brown. Let stand 10 minutes before cutting.

                    Makes 6-9 servings
                    Can be frozen

                    * You can also use your own home-roasted green chiles. Click here to find out how to roast them. You'll need about 8-10 Anaheim or New Mexico chiles depending on the size.
