    I am so excited to say I am going on a beach to beach backpacking trip where we can put our food in caches ahead and not have to carry it ...whoooo hoooo best of all I am leaving this Wednesday and it was my husband's idea!!!! (he rarely comes out of his brain to think of things like this!!!)

    I am beside myself with excitment I can not even tell you!!!! I want to pack and leave right now instead of going to work!!!!

    got any over the fire wonderful recipes to share? I will have a tiny grill and a single burner to cook on with a small skillet ...anything on skewers would work great and I can leave stuff in marinade frozen and let it thaw in a cooler ... ..we love to cook and eat out doors and I would love for you to give me some new and wonderful ideas of things to take and make please


    lay them on me you guys!!! I would be so grateful ..it is so fun to try the things you rec to me ...zippy bags are the planned containers for transporting and salads that can sit and marinate would be wonderful ideas ....

    I love veggies! So that they cook "faster", you can cook zucchini, onions, yellow squash to a medium rare. Then toss them, warm, into a container can may or may not contain a seasoned olive oil. The warm veggies will absorb the marinade's flavors. So when you warm them on the grill, they'll be nicely flavored.

    I've always wondered....Let's say you make a scallop serviche, but instead of letting it marinate in the frig, you toss it in the freezer. When the frozen serviche, defrosts how will it be?

      Mmmm, ceviche.

      Bring bacon to cook over the fire, use the drippings to cook/flavor other things.

      Veggies are always yummy skewered.

      Preprepared kebabs of various types, sealed in baggies to marinate in olive oil and simple seasoning.

        Hi Heidi!

        That sounds like so much fun! I've always wanted to do an overnight on the beach (like Shi Shi, oh yeah).

        So, here's something we've taken on long hikes and it travels wells! Chicken fajitas...chicken breast cut into strips, onions, variety of peppers, olive oil with cumin, oregano, chili powder...mix it all in a zippy bag and then freeze if you need it to last (or leave it fresh and in the cooler and it it first ). Then just pack some good whole wheat tortillas. Once it's thawed, it only takes a short time in the skillet and "waaaala".

          You all are so fancy!!!

          We tin foil packet cook when camping. My personal fave is ground beef with chopped fine onions and peppers, then you make like a burger patty but REALLY flat. Wrap w/tin foil, put in coals. Obviously you can do the same w/ any meat. Just make sure it's really thin. Fish packets work SUPER too.

          Also already cooked meats (I've only done chicken and sausage, not together) with thin sliced veggies in foil packets with a bit of butter or oil, then let heat through in coals.

          Also, and sorry to those not having them yet, nothing beats a campfired baked potato.

          I AM SO JEALOUS. Of the trip, and the fact that DH thought of it. I'm even jealous of the getting ready for it

            Sounds like a great time! I didn't know people were allowed to sleep on beaches. That night air off the water would be glorious! Have fun!

              I am beside myself about this trip and living with my husband is (as I have said before) kind of like I imagine living with Albert Einstien would be ..he is completely absorbed in his latest invention...last week I took and dropped his cell phone in the garbage disposal when I got sick of him not taking a day off to pay complete attention to me ...I think that shook him up a bit (I have to do stuff like this every now and then to get his attention you know!) ..anyway we went out to lunch and he said "let's go backpacking on the beach next week I will even put an 'out of office message on" ..I almost fell of the chair ..cried and hugged him all at the same time!!!!

              Foil cooking!!! I can not believe I forgot about that I love foil cooking!!!

              I am going to marinate a tiny london broil to grill and make a frozen seafood caviche type thing like Megs suggested with scallops prawns and calamari dump them in a bag with some coconut milk, lime, chile and habaneros ..I will add fresh onion and cilantro when I get there..I can always cook it if I dont like the texture..

              I stopped at Trader Joes and picked up some Greek yogurt, nuts and all kinds of easy to carry things...I will take some blackberries for breakfast along with eggs

              I have some low carb tortillas peanut butter, all kinds of cheeses and will do a grocery sweep before I go...I am packed because I was so excited I wanted all the camping things to be around me the nest three days of work

                yes you can camp on beaches here I have to get a permit to backpack in the national park area but that is as simple as just signing up when you get there ...you can even build fires as long as you pick up after yourself and pack everything out ..and that I totally appreciate!!!

                      thanks you guys it is going to be a blast no matter what I am sure!!!..I hate to sound greedy but I really really wish I could do this for a week instead of only four days but I will take what I can get and be happy!!!!

                        Have fun Heidi!

                        I dragged my bike to a bike path today. I pedalled 4 miles out, had my lunch (a mixed veg salad with some poached chicken, followed with a nice piece of brie and a few slices of peaches) and pedalled back.

                        Be sure to bring water---plenty of it on your hike. I carried 3 bottles with me on the ride today and I was super-happy I had another 3 in a cooler in my car!

                            Ok............ that's inspired me and I needed it. I've really slacked on the exercise lately. And there's NO reason in the world why I shouldn't be riding my bicycle. I even took it to a bike shop earlier in the spring to have it checked out and make sure it was in good working order. I rode to work on a "ride your bike to work day" and then put it back in the garage and left it. I think I'll be taking a bike ride this weekend!

                            I'm much more of a morning person for that kind of thing so I think I'll take breakfast along with me... ohhhh... what a good idea! LOL !

                            (Sorry.. a little off topic but I thought I would throw that out there... lol ! )

                            Heidi.... you're going to have soooooo much fun!

                              I am going to go and pick some rosemary and use the stems for skewers for marinated chicken kabobs

                              this sounds good huh?
                              I have so much rosemary ..HUGE hedges of it now ...the stick make great aromatic skewers sooooo I am going to cut up some semi thawed mostly frozen boneless chicken skewer the chicken and marinate in zippy bags with the following for dinner on the first night ....

                              lemon juice
                              olive oil
                              garlic
                              salt and pepper to taste
                              dried oregano and the rosemary flavor of the sticks

                              then I will put the chicken in a bowl ..dice up some tomato and feta cheese toss together with some calamata olives ...a squeeze of lemon and some olive oil!!! ...yummmm I need to go and eat some breakfast the sun is almost up!!!
