    DH and I are about to sit down and carve our gorgeous pumpkins. It's a beautiful Fall day outside, and I'm looking forward to it!

    These puppies are HUGE, and I plan to save the seeds and innards. Now, correct me if I'm wrong, but pumpkin seeds are NOT Induction friendly, right?

    Of course my purpose in posting is to see what favourite pumpkin recipes are out there for the pumpkin insides! I need some great ideas, because I'm going to have quite a bit of it! ensive

    PUMPKIN SMOOTHIE
    here you go for the spirit of the season ...

    and they say you can not have a smoothie on Atkins...enjoy this is really really good!!!....

    for 2 large servings toss into the blender

    1 cup cooked pumpkin puree (I roast pumpkin chunks with a little butter and kosher salt in a heavy duty covered pan in the oven until very soft) to make it easy use canned pumpkin it is great as well!
    1/2 cup heavy cream (use less if you want to)
    cinnamon, nutmeg and ginger to taste (or any combo of pumpkin spices you like)
    1 tsp vanilla (check label)
    2 tsp maple extract (check label)
    splenda to taste (I actually leave it out as I do not use the stuff)
    2 cups ice and just enough water to get it going in the blender I am thinking it takes about a cup)
    blend well and enjoy!!!! you can make this festive with a dollop of whipping cream sprinkle of cinnamon

    you can toss a fresh raw egg in and call it breakfast!!

    OH, and no pumpkin seeds are not Induction friendly. HTH

      I know there is a really good crustless pumpkin pie recipe. That was my 'birthday cake' this year, so to speak. I was a little skeptic at first, thinking what good can it be without the crust, but was really very good. I'll see if i can find it my recipe of things around here.

      Stepping out from tradition this year. Instead of all the mess, i decided to try my hand at a new concept that could revolutionize pumpkin carving, as we now know it. I came upon those very real looking, carveable pumpkins made from styrofoam, at our local Safeway. Now we can be creative in all our glory, without all the goop. I was sold immediately, once the kids didn't have an objections, and bought one for each one of us, and of course the biggest one for me! lol!

      Enjoy your time, however. It is a perfect day for doing it. This is the first day of the rainy season and the weather is cool. Outside of our tremendous downpour last month, that flooded streets, freeways and basements in a very short time, i never saw a cloud all summer. Rissa, i'm sure, can vouche for that one. It's like the African desert plains around here, so this is a much welcome change. I think i'll put ours out, too. Good idea.

        There's an entire pumpkin recipe thread in the "mini pumpkin" thread. Pumpkin is great--very nutritious, very yummy either as a dessert or as a savory vegetable dish.

        I tried something new with it for lunch today. I just peeled it, sliced it thin (about a 1/4 inch), then sauteed it in oil with garlic. Very good.

          You could puree the insides and add it to a mock danish or to some cream cheese ice cream. :eating

          I love to take the rind and slice it up in thin long pieces. I deep fry them until their a bit crispy looking and have them like french fries.

          That garlic pumpkin stir-fry sounds yummy! I will have to try that one too!

            I took an idea I scammed from Naja and kind of dinked with it last night ..came up with this

            3 cupes of cubed pumpkin
            2 tsp fresh chopped garlic
            oil
            1/3 cup soy sauce
            1/2 cup dry sake (any or no wine would be fine use chicken broth if you want)
            3 slices of fresh ginger (I keep whole ginger roon in the freezer and then hit it with a hammer when I need some it cracks off in usable chunks! and it is easier to get juice out of it if needed)
            Saute garlic in oil add pumpkins saute for a min or two then add sake, soy sauce and bring to a boil...add some water and keep at a low boil until all the water is absorbed and the pumpkin is cooked...I sprinkled some sesame oil on it the last min ...it was really good!...

              Pumpkin seeds are not induction friendly.

              Large pumpkins, as far as I know, aren't edible.
