Since a little flaxseed meal is allowed on Induction, I use that on my cube steaks (hadn't had one in a while).

You can use one tablespoon flax meal, salt, pepper, garlic powder and onion powder then pan fry it in olive oil. Oh, I also dip it in egg before I coat the steak.

    Hope this helps.

If you're not on induction and you can use Carbquik, it makes a great coating for deep frying. Then I make "gravy" with a mixture of melted cream cheese thinned with cream. Mmm.....like chicken fried steak of old.

This is my family recipe for cube steak. I've modified it a bit for atkins but it is basically the same:

4 cube steaks (approx 4oz uncooked each)
          1 package cream cheese
          toothpicks
          48 oz V8 Juice

Slice about 1 oz of cream cheese off and place in the center of 1 cube steak. Roll up and use toothpick to secure. Repeat for each steak.

Place in a skillet over med-high heat and brown. Turn the cube steak until all sides are browned. Then add all of the V8 juice. It should mostly cover the meat. Remove meat and serve when meat is cooked completely.

I estimate 4tbsp of the V8 Juice is consumed per piece. 326 Calories, 23g fat, 4g Carb (no fiber), 26g protein.

Also, if you didn't want the veggie juice, you could try to lower the heat and just cook the cube steak without.

Cube steak are pieces of ends of steak (poor cuts) ran through a mallet or tenderizing machine. It will fall apart in your mouth its been tenderized so much. Usually its very inexpensive too. Two thumbs up on the price.

Here's a pic... they are wonderful! My cousins browns them first in a skillet and then puts them in a baking dish. She makes brown gravy from the drippings and mixes in some stewed tomatoes. Cover the steaks with that and bake until they are falling apart tender. Yummmy!

thanks darling girl it looks like a very flat hamburger ....but it is stuck together instead of crumbley it seems ..It does not sound all that appealing but I would try it I guess....I do trust your opinion however
