LOL Nikkinteddy sure come on over I had plenty of leftovers.

You can have the mushrooms iwillbethin....but just not the stuffing j/k. I thought I'd learn to like the mushrooms stuffed. Just couldn't do it. I did like the stuffing though.

      Leftovers sound good to me!

I was baking last night (revolution rolls and my lunch chicken), and I asked my husband if it smelled like a bakery in the apartment. He said it smelled like... incense ?

Re: Second day of my induction and I'm already playing with my food...

Thank you jennyjo! I was hoping someone would see that induction foods do not have to be boring.

Thought I'd post one of breakfast meals. Sooooo here ya go cristy. It was good, although maybe not as mouth watering as the other couple.

It has fried up ham slices(from the deli) a fried egg with melted hot pepper cheese on it.

              2 tablespoon ground flax seed
              1 large egg
              1/4 tsp baking powder
              1/4 tsp baking soda
              1 TBSP softened cream cheese.

Mix well and let set for a minute or so. The flax will thicken up a bit. I put it into a small bowl. One that is about the size of the bun I want.

Then nuke for a minute or two. It should look like it's cooked. (spongy looking) I turn it out on something and as soon as I can I cut it in half (so it looks like a bun) and then toast the halves. Then a touch of butter on each half. I use this for hamburgers...egg sandwiches...etc.

              It was good and filling!

It looks great to me, and I've been wanting a real sandwich again. I just decided I'm going to fix a cheeseburger and have it on this... off to the kitchen!

You're sandwich looks very yummy! I love making that flax bread.

I made a similar recipe and used a dinner plate so it would spread out a bit more. And sliced it in half and then sliced a pocket in each side...sort of a pita pocket.

Also, if you're using it for a burger, you might want to slice it open right after it comes out of the microwave...it lets it hard up a bit more and it won't fall apart when you put your burger veggies and such on!

That was sooooo good. I let it set about a minute before I got it out of the bowl. Sliced it, let it cool and then put it in the toaster. So I just had a burger with cheddar cheese and bread and butter pickles that were sweetened with splenda. This WOE doesn't have to deprive us of anything!

                    Thanks for sharing!

Wonder if I could make this in the morning but not toast it until lunch time at work? If they see this kind of thing, I'll have to be guarding my lunch from co-workers though!

Glad you liked it. I really do and am glad I ran across the recipe for the flax bread.

I've never made these up in advance. If you do try it let me know how it works out.

Now that sounds good too Sheshy! Pita's..Mmm..I'll have to give that a try. Thanks!

Yep everything I made yesterday I made for more than one meal. What I don't eat today I will freeze tonight for other days. And the mushrooms...well I tried it.........AND hmm....I still can't get past them. I loved the stuffing, but the actual mushroom, I managed one bite. I'm thinking I will try them for another meal when I am really hungry. Seems I can handle foods that I'm not particularly fond of when I'm really hungry. Maybe it'll taste better then.
Hey Weighless... If you dont mind i was wondering if you could PM the recipe for the stuffed mushrooms... Cause i JUST LOVE mushrooms and i was looking for another way of eating them besides sauteing them! thank you id appreciate it! Also your cooking looks amazing! Keep up the good work and keep us posted on the good looking pics! So we can drool on the other side of the screen! hahahaha
