  • Fresh tomatillo salsa

    So, I'm a sucker for good marketing, and at farmers market they had a tomatillo salsa "kit", tomatillos, green onion, cilantro and peppers packaged together. Throw in your food processor, add a touch of garlic powder (1-2 slivers if using fresh), salt and sugar to taste. I of course used just a drop of splenda in mine. It's delicious with tortillas chips. Of which I ate exactly one whole chip.

    What else could I do with it? Taco salad type thing sounds good. Cheese crisps? Anybody have any suggestions? It made about 2 cups, and the fresh flavor is really good, I don't think I want to cook with it.
    What is it, a RACE? It's coming off, right????

    In Mexico we used that a lot on chicken burritos. Skip the flour tortilla (or use a low-carb one if you can). Grill chicken, shred it, cover with some of the salsa, add cheese and bake or heat in the microwave.

      As terrible as this sounds, maybe eat it with plain pork rinds?? Might not be too bad. Or, as a veggie dip. I bet cucumbers would be good dipped in it.

      It also sounds a little like gaspacho (sp?). What if you ate it cold, like soup, with a dollup of sour cream.

        Good on the chicken idea. Ew on the pork rind idea. It tastes nothing like gazpacho...but it is really good just with a spoon!!! I put some on a cheddar cheese burger tonight, it really set off the richness, super yummy. Thanks you guys!

          Use it as a chunky sauce for your chicken, fish, or pork dishes. Use it as an omelette filling.

            In México we use that in many dishes, my favorite is over chicken balls, (ground chicken breast with egg and salt), let them boil in the salsa verde until done, and cream when you serve.

            We boil the tomatillos first, then put them in a blender with some of the water, chiken, green chile, cilantro, garlic, a little bit of onion and salt.

            Other tipical dish is pork rinds in "salsa verde" You soak the pork rinds in the tomatillo salsa, let them simmer for a while until tender. Put cream and it is ready.

            Eggs, scrambled eggs whit salsa verde

            Chilaquiles, low carb corn tortillas fried with lard, then pour the salsa verde shreded chiken, shreded cheese until it melts, and cream at the end.

            Enchiladas, low carb corn tortillas fried with lard (let them be tender not crispy, is very fast), then put shreded chicken breast inside with salt and pepper, roll it to make a taco, put them on a rectangular ovenproof dish (stoneware), then pour the green salsa, shreded cheese (mozarella, gouda or chihuahua) and put in the oven until cheesse melts, serve with cream.

                I Love This And Have Not Made It All Summer What Is Wrong With Me?????

                thank you so much I am going to make some today if I can find some nice tomatillos and maybe on grilled chicken for dinner!!!! I need to get on this soon I have to work today!

                oh ideas for you ...well ...make a layered chicken casserole with the salsa monteray jack cheese this is really good

                just dump on any grilled meat of any kind ...prawns ..

                makes a good dip when blended with cream cheese

                if anyone else said any of this pardon me please I did not get to read the whole thread

                    personally I wear latex gloves the skins are sticky and yeah you just peel them off

                      OK I have to barge in and say one more thing try this

                      take tomatillos put them in a roasting pan with several whole cloves of garlic a quartered onion and a few jalepenos ..and lots of olive oil salt and pepper
                      roast until some golden brown parts then cool put the whole thing in the food processor with a little lime and fresh cilantro...

                        Yum yum and YUM. Thank you guys so much. I used the cooked stuff all the time, and the canned stuff, but this is so yummy and fresh tasting I didn't want to cook it. I love the idea of mixing with cream cheese or topping eggs. YUM.
