    I'm not a huge asparagus fan, but I can contribute an easy hollandaise recipe!

    My mom always made the "1-2-3" version:

    melt a stick of butter in microwave

    meanwhile, put this in a blender:
    1 pinch of cayenne
    2 tablespoons lemon juice
    3 egg yolk

    blend the three items, and then drizzle in the butter slowly

    you're done

      Break off the woody part, then stick them in a frying pan with olive oil and cook them until they get a little crispy. Great that way.

        I agree with the salad idea. When I have leftover cooked asparagus, I cut them into 2 inch pieces and toss them with steammed green beans, lemon juice, olive oil, salt and pepper and a chopped hard-boiled egg.

          Oh my gosh, butter and egg yolks is all it is really. Wow I was thinking it was a complicated sauce. I am definately going to try it. Now I have to go to San Pedro to get my asparagas (white or green).

            It is easy -- and it is SO good-- and that is one of the things I love about this diet-- No need to cut all these delish sauces!!

              My favorite is to roast them.

              425 degree oven, shallow pan with olive oil and garlic, roll the clean/snapped asparagus in the seasoned oil and bake for about 15-20 minutes.

              I just bought some today, yum!

                I have to jump in on this one...

                My favorite is to roast them in the oven with olive oil.

                Put them in a pan, drizzle with olive oil, sprinkle your choice of spices, cracked pepper and sea salt is wonderful. Roast them until the tips are crispy.

                    Boil them? Yikes!

                    I break of the woody bottoms and then fix them one of 2 ways. My favorite is to coat them with a little bit of olive oil and fresh ground black pepper, lay them out single layer on a cookie sheet and bake them at 425 degrees until the tips are crispy.

                    The other way is to steam them until they are just done but still crisp!

                    No matter which way I cook them I always serve them with either Hollandaise or Bernaise sauce!

                      Oops, I didn't see Joy's or Sheshy's post....roasting is the best way isn't it !John wouldn't touch asparagus until I fixed them roasted. Now he loves them and we have to purchase 2 bundles of them whenever I make them now!

                        We have asparagus on a regular basis. I've wrapped them in bacon and roasted/grilled them, but honestly just putting them with some olive oil and salt/pepper in the oven is just the BEST in my opinion (and my DH's). My stepson even loves them this way.

                                *drools* There used to be a chef here who made awesome mushrooms stuffed with crab and then covered them with bernaise sauce. It was soooooo good.
