  • made the low carb pizza!

    Boy was it good! Hubby liked it too

    For the pizza sauce, I just took 2 Tbs of tomato paste, added water, oregano, italian seasoning and about a Tbs of Splenda. Topped it with mozzarella, pepperoni and ground beef. Slurp!

    For the crust, I just made the Atkins revolution rolls batter, and spread it out in a cake pan (about 3/4 of it). The rest I put into greased cups for rolls.

    After cooling it, I turned the crust "pie" upside down. When it cooked, the center rose off the pan a bit, leaving a perfect crust ring typical of pizza.

    Plus...I had a wooshie the next day!

      You know what else you can make with the Revolution Roll batter? A stuffed pizza roll. Cook the batter in a jelly roll pan. Let it cool completely. Then spread it with tomato sauce, cheese, toppings like cooked mushrooms, pepperoni, cooked onion, cooked green peppers, etc. Roll it like a jelly roll. Then rebake until it's hot and the cheese has melted.

        Ooo that sounds so yummy!! I will have to try it Sounds kind of like a stromboli (sp?).

          Yum. Did you manage to get the crust at all crunchy or was it fairly floppy? I assume you made the crust first, let it cool, then put it back in with the toppings for a while?

            The crust was a firm but not crunchy. I cooked it a little longer than I would the Revolution rolls. For about 45 minutes at 300 degrees. It was about the same consistency as regular deep dish pizza crust

            I let it completely cool, and put it in the fridge for about half an hour while I made the pizza sauce and browned the ground beef. Then I put the toppings on and baked it for 20-30 minutes (or whenever the cheese melted).

            Edit: 300 degrees, not 350

              to get it crunch you need to leave the baked roll whatever in the oven a long time after it finishes cooking with the temp off to dry out then you get crunch.

                  Yeah, that's a stromboli. You can also fill it with taco-flavored meat, cheese, etc. and do the same thing. Sometimes I make it but fill it with cooked, chopped chicken, mushrooms, and parmesan cheese. Makes a nice breakfast/brunch dish.

                        I now know what my menu for tomorrow is . I'm still a little hesistant on the rolls about getting the egg whites seperated and whipped right, but if I can make a pizza out of this baby then I will be sure to give it full effort

                          The egg whites, you just whip them till their stiff, like in Lemon Meringue Pie

                          Separating eggs can be tricky but it's not too bad. I made a double batch at once on Sunday, and on the sixth egg, the egg yolk dropped in . Dr. Atkins said even if one drop of yolk falls in, that you have to start all over...but it was the 6th egg! Anyhow, I managed to remove the yolk...the yolk didn't break so there was no harm done.

                            I made it tonight... delicious. I cooked the pizza at 425 for 10 minutes and it made the crust nice and crispy.
