  • Need ideas to modify a potentially carb friendly recipe

    One of my favorite home cooked meals is basically a chicken mixture inside of a crescent roll pocket. The inside of this looks pretty darn low-carb friendly so I'm wondering if someone had any ideas on something else to do with it that could be Atkins friendly!

    3 tbl butter (melted)
    1 3-oz cream cheese package
    2 cups cooked chicken diced
    1/4 tsp salt
    1/8 tsp pepper
    2 tbl milk
    1 tbl chopped onion
    1 8oz can crescent rolls

    Thats basically the gist...mix it all up..bake it for 20 min at 350. 4 servings

    So basically I'm looking for a way to ditch the roll part and maybe..put the mixture into something else? Any suggestions or ideas would be awesome!

    Hmm, how about hollowing out zuccini halves and filling them like little boats?

    Or even hollowing out a nice fresh tomato and filling it with the chicken mixture (I love baked tomatoes!)

      Ohhhh yeah, both of those would be awesome MOG.

      Hollow out the inside of a pepper and bake the mixture inside of that. YUM.

      What about the inside of onion???

        Or bake the mixture in a casserole, topping it with the Atkins Revolution Rolls recipe or the faux mashed potatoes recipe.

            How about using the carbquick to make a sort of impossible pie with the mixture?

                  Yup...just starting over. I might try to do an induction version first and then alter it later on!

                    My very first thought was omit the milk (& rolls of course!) & stuff it in bell peppers!

                      It won't be induction friendly, but a lc crescent roll is in the process of being developed. If all goes well, in a couple months, we should have something.

                        Did Atkins on and off from Feb 2005 until April 2008. Fluctuated between 15 st 1/211lbs and 11 st 1/155lbs.
                        On different weightloss programme from 28th May 2008 start weight 14 st 11/207lbs.
                        Current weight 10st 3lbs/143lbs.
                        Ultimate Goal Weight 9 st/126lbs.

                          That would sound good wrapped in a lettuce leaf!!! I mean, cook the inside in a cassarole then spoon it into a leaf and roll it up like a burrito. YUM! I'm going to have to give this recipe a try!

                            Thats exactly what I did actually! I didn't want to go back to the store so I just attempted this in a casserole dish.

                            Turned out pretty good =) Going to try the pepper suggestion the next time around =)
